‘Grown-Up’ Sour Candy Decorates This Citrus Olive Oil Cake | Cake Recipe | Pastries with Paola
This is no ordinary olive oil cake. Adorned with ‘grown-up’ sour candy made from fresh oranges, this gorgeous cake is in a league of its own. Pastry chef Paola Velez breaks down her recipe for Citrus Olive Oil Cake with Sour Candied Oranges, and just to be clear, it tastes as good as it looks. Buckwheat flour adds an extra layer of depth and flavor to the dish, an earthiness that balances out the sweetness of the buttercream. Meanwhile, the sweet, citrus-infused syrup from the candied oranges adds a tangy note to the light and fluffy crumb.

The audience will be taken to “flavortown and back,” as Paola says, with the tropical fruits of her childhood morphing into stunning desserts, drawing on her Afro-Latina background and quirky sensibilities.
