Everyone should know how to make carnitas, specifically, this make-ahead version just makes sense for the home cook. It's literally, cut up pork chunks, add salt, add water, cook until tender and crisp up beautifully. It takes about an hour and a half total, but like 10 minutes of that is active time.

On this video, I cooked up some savory smoked carnitas. I used the carnitas to make some tacos that were packed with so much flavor. This was a super simple cook that only took 5 hours at 250 degrees on my Yoder Frontiersman.

Authentic Carnitas on a Pellet Smoker
You too can make simple Pork Canita's on your grill, pellet smoker or even your home oven. Adapt this recipe to suit your needs.
6-8 lb Pork Butt (Pork shoulder with bone-in)
Dry Rub
1/4 cup salt, 1/4 cup pepper, 1/2 cup smoked paprika,
1 Tbsp of each, Garlic, Cumin, and Oregano
Remove bone from Raw Pork Butt, cut into fist-sized chunks of meat, and coat each piece completely.
Cook uncovered on the grill, smoker, etc at 250° for 3 hours.
At the end of 3 hours, line a tin pan with 2 sliced medium onions, 8 bay leaves, and 8 garlic pieces.
Stack meat on top of the onion layer, add your favorite stock to just cover the onions, cover, and put back on 250° smoker for 3 more hours.
That is it, they are ready when tongs on a piece of the meat breaks it easily.

Smoked BBQ Carnitas Tacos Recipe | Traeger Timberline 850 | Heath Riles BBQ
My Smoked BBQ Carnitas Tacos are the perfect cure for a Tex-Mex craving. They are cooked on the Traeger Timberline 850, giving them the best smoky flavor. They’re seasoned with my signature sweet and spicy rubs and braised in tangy vinegar sauce. If you like loaded tacos, you’ll love my version! I added peppers and onions to give the tacos fajita flair.
These tacos are done in an authentic style with a BBQ twist. They’re flavorful yet mild enough that anyone can enjoy them. Serve this delicious dish for family dinners, Super Bowl parties, or cookouts. Add a few toppings, and you’ll have a winning spread. It’s bound to be a hit!

Cheshire Pork CT Butts
ThermoWorks Hi-Temp Silicone Basting Brush
INGREDIENTS
- (2) 3.5-4 lb Cheshire CT Butts or (1) 7-8 lb pork butt cubed up
- Heath Riles BBQ Garlic Jalapeño Rub
- Heath Riles BBQ Honey Chipotle Rub
- 1/2 cup of Heath Riles BBQ Tangy Vinegar Sauce
- 1 cup chicken broth
- 1 bell pepper sliced (I had left overs so used a variety of colors)
- 2 onions thinly sliced
- corn tortillas (or flour if you choose)
- additional toppings of your choice (we used homemade guacamole, pico de gallo, cilantro, lime wedges, chopped raw onions, taco sauce of choice)
DIRECTIONS
- Cube pork butt into small pieces
- Cook on Traeger (or grill of your choice) at 300º for 1.2-2 hours
- Add cubed pork to a bed of sliced onions and peppers, add chicken stock and Heath Riles BBQ Tangy Vinegar Sauce.
- Braise for 1 hour and check for tenderness. Once meat is tender, let it rest for 20-30 minutes and then shred for tacos.
- Build your taco to your liking. ENJOY!
