EASY Pulled Pork Tacos In Half The Time! | Carnitas Instant Pot Recipe
Make this recipe in your Instant Pot or any timed pressure cooker. If you don’t have a pressure cooker and would like to make this in a Dutch oven for similar style pan, cook for 4 to 6 hours.
INGREDIENTS
Carnitas
• 3-5 lb bone in pork shoulder/pork butt
• ¼ cup olive oil
• 3 tbsp Chef Ange Base Seasoning -
• 2 tsp cumin
• 2 tsp ancho chili powder
• 1 tsp smoked paprika
• 1 onion, coarsely chopped
• 8-12 garlic cloves, whole
• 2-4, canned chipotle peppers in adobo sauce, coarsely chopped
• 4-6 cup chicken or beef stock/broth
• 2-3 bay leaves
• 1 tsp dried oregano
Tomatillo Salsa
• 5-8 tomatillo, cleaned and halved
• 1 onion, coarsely chopped
• 1 jalapeño pepper, coarsely chopped
• 2-4 garlic cloves, whole
• small bunch fresh cilantro, lower stems removed
• 1 lime, juiced
• heavy pinch of salt
Quick Pickled Red Onions
• 1 large red onion, thinly sliced
• ½ cup water
• ¼ cup white vinegar
• 1 tbsp sugar
• 1 tsp salt
• ¼ cup shredded cheese per taco
• corn tortillas
• lime wedges & fresh cilantro, for garnish

Traditional Mexican Pork Carnitas in a Cast Iron Pot
Pork carnitas is one of the most famous dishes to come from Mexico: slow-cooked pork, shredded and fried up to give a crispy and wonderfully delicious take on pulled pork. While pulled pork is easy to make and delicious, this will take your pulled pork to a new level. In fact, there are two ways to make this dish: the easy way and the traditional way. The easy way is to slow-cook a big pork shoulder in a cast iron pot until it falls apart, producing a tasty and very satisfying pulled pork. The traditional way is also easy to do, and it's faster than the usual slow-cooked method. However, the traditional method for making carnitas involves deep-frying the pork pieces in lard, for as long as two to three hours. Because not everyone wants to use up to a gallon of lard in the making of this dish, the easy way is the more popular method for making carnitas.
