How To make Sm Pocket Spreads
-VIVIAN THIELE NRHF19C The following recipes are additional spreads that can be used in place of butter on the outside of bread/dough when making pockets. Mayo Spread: 1/4 cup real Mayonnaise; 1/4 tsp. onion powder; 1/4 tsp. celery salt. Stir to combine. Enough for 8 slices of bread. Mayo spread will enhance the flavor of most foods except sweets. Especially good on sandwiches with eggs, cheese, ham and seafood or vegetable pockets. Curried Mayonnaise: 1/4 cup mayonnaise; 1 tsp. mild Indian curry powder. Stir to combine - enough for 8 slices of bread. Curry is a nice flavor accompaniment with beef, chicken, lamb, shrimp and vegetables. Maple butter: 1/4 soft butter or margarine; 1/2 tsp. maple flavoring. Stir to combine. Enough for 8 slices. Use maple butter for pockets. Use with pork, ham or sweets. Vanilla butter: 1/4 soft butter or margarine; 1/2 tsp vanilla extract. Stir to combine - enough for 8 slices of bread. Vanilla butter enhances flavor and has an enticing aroma while cooking. Almond Butter: 1/4 soft butter or margarine; 1/4 tsp almond extract. Stir to combine - enough for 8 slices bread. Use with fruit pie filling or other sweets. Herbed butter: 1/4 cup soft butter or margarine; 1/4 tsp herbs (combine basil, thyme, rosemary and tarragon). Stir to combine. Spread on one side of 8 bread slices or other bread products used for pockets. This taste especially good with meats, cheese and vegetables. Garlic butter: 1/4 cup soft butter or margarine; 1 clove garlic, crushed. Stir to combine. Enough for 8 bread slices. Use with any eat or vegetable filling. Honey butter: 1/4 cup soft butter or margarine; 1 tblsp. honey. Stir to combine. This is enough to spread 8 slices of bread. Because the honey promotes browning, use this on pockets which only have to brown and heat through. If used on egg sandwiches,etc... the bread may over brown before the egg finishes cooking. Lemon butter: 1/4 cup soft butter or margarine; finely grated rind of 1 lemon (about 1/2tsp.). Stir to combine. This is enough to spread 8 slices of bread. The fresh lemon brings out the flavor of fruit filling and seafood fillings.

Antipasto Baguette
Serves 4
INGREDIENTS
1 traditional baguette
2 tablespoons olive oil
Kraft Cream Cheese Spread
200g cold roast chicken meat
1⁄2 cup semi-dried tomatoes
1⁄2 cup basil leaves
PREPARATION
Cut the baguette in half, lengthwise, and remove some of the soft bread. Brush the inside with olive oil and then squeeze a generous amount of Kraft Cream Cheese Spread in the bottom of the loaf. Top with chicken, semi- dried tomatoes and basil leaves.
Squeeze a generous amount of Kraft Cream Cheese Spread on the underside of the baguette top, before replacing it.
Wrap the filled baguette, firmly, in plastic cling-film and refrigerate for 4 hours, for the flavours to develop. Slice into pieces, to serve.

150g all purpose or bread flour
4g baking powder
Mix well
230g Greek yogurt
Mix well
15ml olive oil
Knead the dough
Cover and rest for 15-20 minutes
Sprinkle some flour on a work surface
Divide the dough into 4 equal pieces
Shape each piece of dough into a ball
Cover and rest for 15 minutes
After 15 minutes
Take a piece of dough
Flatten it with a rolling pin
The diameter is about 18cm
Medium heat
Place the dough in the pan
Flip over
Fry until both sides are golden brown
The inside can inflate with air!
It's super cool!

Today’s yet another day that I share with you a simple recipe for a local delicacy (people from Western Kenya you need no introduction to this ????).
I’ve searched online and there’s no such recipe, so enjoy, won’t you!
Ingredients
Maize flour
Water
Afterwards
Sugar to taste
Milk/water
Step 1
Mix the maize flour and water to form a ‘dough’
Cover it with a clean kitchen towel and let it ferment for a day or two. This is in order to achieve that rich aroma for your makhalange/mkarango/Luhya cornflakes name it! ????
Step 2
After Day 2 (or 1, according to your preference), pour the content in a shallow frying pan and mix it up on medium-low heat until it browns .
Once it turns brownish, you better have you plate:bowl ready to devour into this snack.
Add some sugar to taste. You can also choose to add some fresh milk or water and mix it up. ENJOY!
