Ingredients:
2 pounds ground beef
1 cup breadcrumbs
1 onion, finely chopped
2 garlic cloves, minced
2 eggs
1/2 cup milk
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
For the Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Instructions:
Preheat the oven to 350°F.
In a large mixing bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, and black pepper. Mix well with your hands or a wooden spoon.
Transfer the mixture to a loaf pan and smooth the top with a spatula.
In a small mixing bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze.
Spread the glaze evenly over the top of the meatloaf.
Bake the meatloaf for 1 hour and 15 minutes, or until the internal temperature reaches 160°F.
Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.

Meatloaf with Basil, Wild Mushrooms and Bacon – Savory
This meatloaf with basil, porcini mushrooms and bacon is made with love and attention. The best from the oven, enjoy!
Ingredients
1 tbsp dried porcini mushrooms
½ cup boiling water
5 ½ oz leek
1 garlic clove
5 slices of bacon cut into 1/4 inch pieces
½ lb ground pork
½ lb ground beef
3 slices of white bread
½ cup minus 1 tbsp milk
7 oz wild mushroom mix
1 tbsp fresh basil leaves
½ lb. Roma tomatoes
Kitchen ware
Loaf pan (12 inch), baking dish (8x8 inch)
Preparation
Preheat the oven to 350°F. Put the dried porcini mushrooms into a small bowl, add the boiling water. Let stand until mushrooms are soft, about 15 min. Meanwhile, wash the leek and slice thinly. Dice the garlic clove. Heat a skillet, add bacon pieces until most of the fat is rendered (about 5 min). Mix the ground beef and pork in a bowl with the leek, garlic and pepper. Add salt if desired. Remove crusts from the bread slices, place bread in a shallow dish, add the milk. Let soak about 2 min. Remove the bacon from the skillet with a slotted spoon and add to the ground meat mixture. Squeeze the milk out of the bread, stir into the mixture.
Wild mushroom mix
In the skillet, sauté the wild mushrooms in the bacon drippings over medium heat for about 5 min. Meanwhile drain the porcini, reserving soaking liquid. Finely, chop the softened mushrooms, stir into the ground meat mixture. Add the remaining soaking liquid to the wild mushroom mix in the skillet, increase the temperature and cook about 5 min. Meanwhile chop the basil leaves. Remove skillet from heat, stir in basil.
Bake the meatloaf
Grease the loaf pan. Put half of the ground meat mixture into the loaf pan, spread the wild mushroom mix evenly over the mixture, top with remaining meat mixture. Place the loaf pan on the rack in the middle of the oven and bake for about 45 min. Place the Roma tomatoes in the baking dish.
After the meatloaf has been in the oven for 35 min., place the tomatoes in the baking dish alongside the meatloaf for the remaining time. Remove the meatloaf from the oven and let rest for 5 min. Pour off the fat. Transfer meatloaf to a serving dish and top with the roasted tomatoes.

Pineapple Meatloaf
2 pounds ground beef
20 ounce can crushed pineapple, drained
1 cup diced onion
1 cup diced bell pepper
2 cloves garlic
1 cup Hawaiian rolls, shredded
2 eggs
salt and pepper to taste
Mix together and form into small ovals. Bake at 350F for 50 minutes
To make the sauce
1 cup pineapple juice
1 TBSP corn starch
2 tsp prepared yellow mustard
1/4 cup ketchup
2 TBSP teriyaki sauce
a couple dashes Tabasco to taste
Mix sauce ingredients together before warming it up, bring to a simmer stir often. Remove from the heat and allow it to cool.
