Sausage gravy and biscuits is the iconic southern dish. My Grandmother's was really good and she taught me how to make it. There is one easy trick for your gravy to get rave reviews! I'll show you how in this video.
This is such a nice weekend breakfast or winter dinner, but it works well for a brunch dish when you have company too. Just double the recipe, add some extra milk to the gravy and keep it warm in your Crock-Pot. Then double your drop biscuits recipe:

1 lb. Ground Pork
1/3 cup All Purpose Flour
2 tbsp Butter or Bacon Grease
2 cups Whole Milk
3 tsp Black Pepper minimum
1/8 - 1/2 tsp Red Pepper Flakes (optional)
1 tsp Creole Kick (optional)

Sausage Gravy
RECIPE COURTESY OF REE DRUMMOND

Ingredients
1 pound breakfast sausage, hot or mild
1/3 cup all-purpose flour
3 to 4 cups whole milk, more to taste
1/2 teaspoon seasoned salt
2 teaspoons freshly ground black pepper, more to taste
Biscuits, warmed, for serving
Directions
With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
Spoon the sausage gravy over warm biscuits and serve immediately!

Homemade Country Sausage Gravy
1 pound sausage
1/3 cup all-purpose flour
4 cups whole milk
3/4 teaspoon seasoned salt
1 teaspoon black pepper
In a large skillet over medium -high heat, brown the
sausage, chopping it into small chunks as it fries.
Once it is no longer pink, reduce the heat to medium- low and sprinkle in about half the flour.
Stir well until flour is absorbed by the sausage and grease. Repeat with the rest of the flour. Cook for another 1 to 2 minutes.
Pour in about half the milk and stir well. Add the rest of the milk, stirring constantly. Cook the gravy, stirring constantly, until it thickens for about 10 minutes. Sprinkle in the seasoned salt and pepper and continue stirring until it is to the thickness you prefer. If it becomes too thick, add another 1/4 to 1/2 cup of whole milk.
