Torta de Huevo -- A CLASSIC Lenten Meal for New Mexicans!!!
Hey Chile Heads! As many of you know, Catholicism and Christianity have influenced New Mexican culture in many ways. Over the years, New Mexicans have created a delicious meal for the Lenten season: Torta de Huevo. This meatless meal is packed with delicious flavor and, when paired with beans and quelites, enough protein for the perfect, balanced Lenten meal. You've got to try this recipe!

Torta de Huevo
Ingredients:
2 cups canola oil
4 eggs, whites and yolk separated
3 tablespoons oat flour
1-tablespoon flour
1-teaspoon salt
¼-teaspoon pepper
Red chile sauce (recipe below)
Directions:
Heat canola oil on medium heat (about 350). Separate egg whites into one bowl and beat with a mixer until soft peaks form. Add oat flour and regular flour and gradually mix into whites. Now add beaten egg yolks, and combine thoroughly. Ladle one tablespoon of mixture into heated canola oil and fry for about 30-45 seconds turn over and cook for another 30 seconds. Remove from the oil and put onto a paper towel to drain. Add to red chile sauce and serve with fresh pinto beans and quelites.
Red Chile Sauce
2 Tablespoons flour
2 Tablespoons canola oil or vegetable oil
3-4 Tablespoons red Chile powder
1 ½ cups water
¼-teaspoon garlic powder or 1 clove fresh, diced finely
¼-teaspoon salt
1/8 or pinch of dried oregano
Heat oil in medium size saucepan on medium to low heat. After about a minute, add flour and stir constantly so it does not burn. Cook for approximately one minute and then add red chile powder, continue stirring constantly. The consistency will be crumbly. After another minute, begin to whisk in cold water slowly. Once the sauce begins to boil, add garlic, oregano and salt. Continue cooking for 20 minutes on low heat.

The BEST Quelites Recipe -- FIERY, HEARTY Classic New Mexican Side-Dish
Hey Chile Heads! Today, we're making on of my favorite classic side-dishes: Quelites. For those who may not know, Quelites are cooked spinach with lots of flavorful spices, including crushed red pepper. They pair beautifully with pinto beans and chile and are the perfect veggie side dish for your New Mexican meal. You're gonna love this recipe!!

Quelites
Ingredients:
12 oz. chopped frozen spinach
¼ cup diced onion
2 tablespoons canola oil
¾-teaspoon salt
½ teaspoon crushed red pepper
Prepared pinto beans
Directions:
Thaw spinach in the microwave, or let sit out of the freezer until it is no longer frozen. Drain all excess liquid from spinach using a dishtowel, or paper towels. Heat oil in a medium sauté pan and cook onions for about 2 minutes. Add spinach and mix until combined with onions. Add salt, crushed red pepper and continue to cook for about 10 – 15 minutes. You want to get the earthy taste out of the spinach. Combine with cooked pinto beans, or enjoy with red chile, or both!
Quelites are typically prepared during the Lenten season, but can be enjoyed anytime of the year.

Estos frijoles con espinacas son un platillo delicioso y muy saludable. Se trata de una receta tradicional mexicana. La mezcla de frijoles y espinacas es muy nutritiva, ya que contiene muchas proteínas, hierro y vitaminas. además, es muy fácil de preparar y sólo requiere unos pocos ingredientes.
Los frijoles son un alimento muy saludable, ya que son ricos en proteínas, hierro y vitaminas. Las espinacas también son muy beneficiosas para la salud, ya que contienen muchas vitaminas y minerales. Juntas, estas dos verduras son una combinación perfecta para un platillo delicioso y muy saludable.
Para preparar este platillo, sólo necesitas hervir los frijoles y las espinacas condimentados a tu gusto. Esta receta es perfecta para vegetarianos y veganos, ya que es muy fácil de preparar y muy saludable. Si buscas un platillo delicioso y nutritivo, entonces no busques más, ¡Los frijoles con espinacas son perfectos para ti!
Ingredientes:
220 gramos de espinacas
2 tazas de frijoles cocidos
1 tomate rojo picado
1 chile jalapeño picado
1/2 cebolla picada
2 cucharadas de chile de árbol quebrado
3 cucharadas de cilantro
Manteca y un sartén
Procedimiento:
Poner en un sartén un poco de manteca, puede ser vegetal o animal.
A temperatura baja freír la cebolla.
Agregar el chile jalapeño, las hojas de cilantro, el jitomate.
Cuanto estpen fritas las verduras, agregar los frijoles, cuando empiecen a herbir,agregar las espinacas y el chile quebrado.
Probar el sabor, la sal y el picante.
Cuando las espinacas ya estén cocidas ya están listas para servir.
Decora con unos trocitos de queso
