How To make Pumpkin Waffles
1 c Canned pumpkin puree
1 c Sour cream
1 c Milk
4 Eggs; separated
8 tb Unsalted butter; melted
1/4 c Packed dark brown sugar
1 3/4 c All-purpose flour
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
3/4 ts Cinnamon
1/4 ts Freshly grated nutmeg
GARNISH:
Sour cream Honey Chopped pecans Raisins Whisk together pumpkin, sour cream, milk, egg yolks, melted butter and brown sugar in a mixing bowl and reserve. In another mixing bowl combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. By hand, stir the dry ingredients into the liquid, and reserve. In a separate bowl, beat the egg whites until soft peaks form. Whisk one third of the beaten whites into the batter to lighten it. Then fold in the remaining whites. To make waffles, follow the manufacturer's instructions on your waffle iron. Serve with maple syrup or top each with a dollop of sour cream and a sprinkling of pecans, raisins and honey. Ingredients:
400g nutmeg
200ml of milk
1 egg
40g butter (+ additional for coating)
250g flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon dried ginger
1 teaspoon nutmeg
pinch of salt
maple syrup, for topping
ice cream, for serving
Preparation:
- Peel a squash, grate it and cut it into cubes. Steam. Blend.
- Beat eggs, sugar, and milk. Add melted butter.
- Mix pumpkin with milk mixture.
- Mix flour, nutmeg, ginger, baking powder, and a pinch of salt.
- Mix dry ingredients with wet ingredients.
- Bake grandma's cake in a greased grandma's cake machine.
- Serve topped with maple syrup and a spoonful of ice cream.

Pumpkin Spice Waffles Recipe | The Sweetest Journey
Learn how to make delicious pumpkin spice waffles made with pumpkin puree. In this video I am also using a pumpkin shaped mini waffle maker!~
Ingredients:
2 Cups All Purpose Flour (240g)
2 Teaspoon Baking Powder (10g)
1/4 Teaspoon Salt (1.5g)
2 Teaspoons Pumpkin Pie Spice (3.7g)
1/4 Cup Granulated Sugar (48g)
2 Tablespoons Brown Sugar (24g)
4 Eggs
1 Teaspoon Vanilla (5ml)
1/2 Cup Milk or Milk Substitute (120ml)
1 1/2 Cups Pumpkin Puree (366g)
3/4 Cup Melted Butter (180ml)
Directions:
1. In a small bowl, whisk together the flour, baking powder, salt, pumpkin pie spice, and both sugars. Set aside. In a large mixing bowl, lightly beat the eggs, add the vanilla, milk, pumpkin, and melted butter. Beat just until well combined. Gradually add in the flour mixture in 3 additions, mixing just until combined after each.
2. Preheat the waffle iron and grease with cooking spray if needed. Spoon batter into waffle iron. If using a mini waffle maker, use 3 tablespoons of batter. Cook for about 4 minutes or until the waffle is cooked through. Repeat with the remaining batter. Serve warm.
| Makes about 10-12 mini waffles.
