How To make Pumpkin Spice Cake1
3 ts Baking powder
2 c All-purpose flour
1/4 ts Baking soda
1/2 ts Salt
1 1/2 ts Ground cinnamon
1/2 ts Ground ginger
1/2 ts Ground allspice
1/2 c Soft shortening
1/2 c White sugar
1 c Packed brown sugar
1 Egg
2 Egg yolks
3/4 c Buttermilk
3/4 c Pumpkin puree
1/2 c Any chopped nuts
Sift flour with baking powder, soda and seasonings. Cream shortening with sugars, then beat in whole egg and egg yolks. When creamy and fluffy, add flour mixture alternately with buttermilk, beginning and ending with flour. Add pumpkin, nuts, and mix thoroughly. Cake :
1 box yellow cake mix
1/2 cup sugar
1/2 cup oil
1 cup pumpkin puree
4 eggs
2 tsp pumpkin spice (more or less if you don't like/ like spice)
1/2 cup water
Frosting:
1/2 cup butter
8 oz cream cheese
1 tsp vanilla
1/4 tsp salt
4 cups powdered sugar
Icing drip:
1/2 cup powdered sugar
1/2 tbsp milk or heavy cream
1/4 tsp vanilla
1 tbsp pumpkin puree
1 tbsp butter
1 tsp pumpkin spice

For the pumpkin cake:
1 cup pumpkin
2 eggs
1/2 cup sugar
1/2 cup brown sugar
1 stick butter, melted
1/4 cup Greek yogurt or sour cream
1 cup flour
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp baking powder
1 tsp baking soda
For the icing:
5 oz cream cheese, slightly softened
6 tablespoons butter, room temp
1 tsp vanilla
1 cup powdered sugar
1 tsp instant espresso powder
Directions:
1. Preheat oven to 350.
2. In a large bowl whisk together the first 6 ingredients.
3. Add the remaining ingredients and whisk just until combined.
4. Pour into a 8x8 pan.
5. Bake for about 30 minutes or until a toothpick inserted comes out clean.
To make the frosting:
1. Beat together the cream cheese and butter until light and fluffy.
2. Beat in vanilla and espresso powder.
3. Beat in the powdered sugar.

Spice Flancocho Recipe
Ingredients:
For Spice Cake:
2 ½ cups all purpose Flour
2 tsp Baking Powder
1 tsp Baking soda
½ tsp salt
1 ½ tsp ground cinnamon
1 tsp ground ginger
½ tsp nutmeg
½ tsp ground cloves
4 eggs
1 cup oil
2 tsp Vanilla
1 cup Applesauce
1 ½ cup Brown sugar
¼ cup sugar granulated
1 cup Shredded Apple
For Pumpkin Flan:
1 can evaporated milk
1 can condensed milk
1 cup of pumpkin puree
1 tsp of vanilla
½ tsp of cinnamon
½ tsp of ginger
¼ tsp of nutmeg
¼ tsp of ground cloves
3 eggs
For Caramel:
1 cup of sugar
4 tbsp of water
Instructions:
For Spice Cake:
1- Place all ingredients in a bowl, mix with a hand mixer until well incorporated. Mix for about 2 minutes at medium speed, making sure there are no dry spots. Do not overmix.
2- Set aside.
For Flan:
1- In a blender, place the milks, pumpkin, eggs and vanilla and blend for about a 1 minute and a half.
2- Place spices into the mixture and blend for an additional 10 seconds.
3- Set aside
For Caramel:
1- Place sugar and water in a heavy-duty microwave bowl.
2- Microwave for 5 ½ -6 ½ minutes depending on the power of your microwave, until it is golden brown.
For Flancocho:
1- Pour caramel into the bottom of your Bundt pan, cover the bottom and the sides with the caramel.
2- Let it sit until the caramel has hardened.
3- Pour the cake butter into your Bundt pan, tap lightly against the counter to get any air bubbles out.
4- Then pour the flan mixture into the cake batter slowly.
5- Cover with aluminum foil.
6- Bake for 1 hour in a Bain Marie (Water bath).
7- After 1 hour, check for doneness (If it is still wet, bake in 10 minute intervals until done).

Happy fall y'all! I know you guys are with me when I say that I LOVE all things pumpkin! This fall I am going to be trying out some new pumpkin recipes that I haven't tried before! This recipe is for my pumpkin spice dump cake. It doesn't look that pretty but it tastes DELICIOUS! Add some whipped cream to the top and it is perfect! hope you guys will make this and let me know if you liked it!
