Rum Glaze---- 3/4 cup powdered sugar 1/2 teaspoon rum extract 2 to 3 teaspoons milk Beat egg slightly in medium bowl with fork. Stir in remaining ingredients except rum glaze just until moistened. Divide batter evenly among 12 2 1/2-inch muffin cups that have been greased on the bottom only. Bake about 15 minutes at 400 degrees or until golden brown. Immediately remove from cups and spread with rum glaze made by stirring together the sugar, rum extract and milk.

Pina Colada Cupcakes Recipe:
Ingredients:
1 pack pineapple cake mix 3 eggs, beaten 1/2 cup cooking oil 1 cup of water 12 cherries with stems (Purchased at Target) 1 cup of pineapples, cup up 1/4 cup coconut flakes
Cream Cheese Frosting: 1/2 cream cheese bar, room temperature 1 cup heavy whipping cream 1/2 cup confectioners sugar 1/2 tsp vanilla extract
*Recipe for 12 cupcakes

Full Recipe :- For the cupcakes Ingredients 210 gms all purpose flour (maida) 1 tsp baking powder Pinch of salt 150 gms brown sugar 50 gms granulated sugar 115 gms melted butter 1 large egg 1/2 cup (120 ml) pineapple juice 1/2 cup (120 ml) coconut milk 2 tsp vanilla essence
All ingredients should be at room temperature
Preheat oven to 180°C. Line 12 count muffin pan with cupcake liners. In a bowl mix flour, baking powder and salt. In a large bowl whisk melted butter with brown and white sugar. Add in the egg, vanilla essence, pineapple juice and coconut milk and continue whisking until combined. Slowly add in the dry ingredients and mix until no lumps remain. Fill the cupcake liners and bake at 180°C for 25-30 minutes.
Whip cream into peaks and add milk and juice. Spread over cupcakes and place chopped pineapples over it.
