How To make Pets De Soeurs( Cinnamon Rolls)
CRUST:
3 c Flour
2 tb Baking powder
1 t -Salt
1 t Sugar
1/2 c Lard
1 c Milk
FILLING:
2 tb Butter -- softened
1 c Brown sugar
1 t Cinnamon
1 c -Water
Sift the dry ingredients together. Blend in the lard to form a coarse mixture. Gradually add the milk until a soft dough is formed. Roll the dough until it is fairly thin, although it should be thicker than a regular pie crust. Butter the dough with soft butter, cover with 1/4 inch of brown sugar and sprinkle with cinnamon. Roll the dough up like a jelly roll and slice into circles about 1/2 inch thick. Pour water into a casserole dish. Put the sliced dough into the casserole and bake at 375F for about 30 minutes or until the pets de soeur are golden brown. VARIATION: Cranberry jam may be substituted for the sugar and the cinnamon.

• 1,25 ml (1/4 de c. à thé) de sel (pour la pâte)
• 180 ml (3/4 de tasse) de cassonade (pour la garniture)
• 60 ml (1/4 de tasse) de beurre ramolli (pour la garniture)
• 5 ml (1 c. à thé) de cannelle (pour la garniture)
???? Etapes de la recette :
1. Dans le contenant du robot culinaire, déposer les ingrédients de la pâte. Mélanger jusqu’à l’obtention d’une boule de pâte. Envelopper la pâte dans une pellicule plastique et réfrigérer 30 minutes.
2. Préchauffer le four à 180 °C (350 °F).
3. Dans un bol, mélanger les ingrédients de la garniture.
4. Sur une surface légèrement farinée, étaler la pâte en un carré de 25 cm (10 po).
5. Répartir la garniture sur toute la surface de la pâte, puis rouler la pâte en serrant. Couper le cylindre en dix rondelles de la même épaisseur.
6. Beurrer un plat de cuisson carré de 20 cm (8 po), puis y déposer les rondelles de pâte côte à côte. Verser le sirop d’érable sur les rondelles de pâte. Cuire au four de 30 à 35 minutes à 180 degrés / 375 Fahrenheih

This is one of those recipes that Glen ate a lot as a child, and they were a staple every Christmas Eve at Réveillons.
There really is no recipe here... you just roll out any leftover pie dough, spread on some butter and sprinkle on teh brown sugar. Roll it up, slice, and bake in the oven that the pie is baking in.

Butter Tarts (and Bonus Pets-De-Soeurs recipe) - with yoyomax12

This is the pastry recipe I use:
(it is the one on the Tenderflake brand lard package).
Butter Tart filling:
1 cup Butter, melted
2 cups brown sugar
4 eggs
1/2 cup syrup
1 tsp vanilla
1/4 tsp salt
2 tsp white vinegar
Raisins or pecans if desired, a few for each butter tart.
Blend together well and pour into unbaked tart shells. Don't overfill or they will spill over when baking. You can add a few raisins and/or nuts to the tart shells prior to filling them as well.
Bake at 400 F for about 10-15 minutes until pastry is baked and filling is at desired firmness.
If the filling does bubble up over the edge of your tart shell, I recommend running a knife around the edge to loosen it while they are still hot.

Comment faire des pets de soeur
Les pets de soeur sont une recette bien de chez nous. On la fait souvent avec un restant de pâte à tarte (pâte brisée). On peut aussi les faire avec de la pâte feuilletée (qui deviendra un peu comme des feuilles de palmier) Dans cette recette j'ajoute des noix et du sirop d'érable, afin de les mettre au goût du temps des sucres.
Ingrédients :
1 tasse de cassonade ou sucre d'érable
1/4 de tasse de beurre
1/2 tasse de noix (de Grenoble et/ou pecan)
pâte brisée (à tarte) ou feuille de pâte feuilletée
1/4 de tasse de sirop d'érable
