How To make Penn Dutch Traditional Cheesecake
3 pounds cream cheese -- softened
1 1/2 cups granulated sugar
6 eggs
1 cup sour cream
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons powdered sugar
NOTE How simple can a cheesecake be? This cake is simple and delicious, easy to make and great to eat. Be prepared for lots of praise when you serve this one! BTW, 3 pounds of cream cheese *IS* correct! That's six 8oz packages of cream cheese! Me ke aloha, Mary Use a 10 inch springform pan. In a large bowl beat the cream cheese and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Add the sour cream and vanilla and continue to beat until smooth. Pour into a well-buttered springform pan. Place the pan inside of a larger pan containing 1 inch of water and bake in a preheated 400 degree F oven for 1 hour. Transfer the cake to a wire rack and allow to cool for 3 hours. Remove the sides of the springform pan and refrigerate the cake overnight. Remove the cheesecake from the refrigerator 1 hour before serving. LEMON SPONGE PIE ~ PENNSYLVANIA DUTCH AMISH RECIPE
Ingredients:
1 pie crust
1 cup sugar
3 tbsp. flour
pinch salt
2 eggs, separated
2 tbsp. lemon juice
2-3 tsp lemon zest
2 tbsp. butter
1 cup milk
Mix the sugar, butter and egg yolks together.
Add lemon juice and lemon zest and stir till well
combined. Add sifted flour and salt and mix
until flour is absorbed.
Stir in milk and set to the side.
Beat egg whites until rounded peaks form.
Fold egg whites into batter just until combined. Do not
over mix.
Pour into pie crust and bake at 350 degrees for 35-40
minutes or until firmly set.
Let pie cool and refrigerate and serve chilled.
Enjoy.

INGREDIENTS:
--1/2 cup butter
--1 1/2 cups sugar
--1/2 teaspoon vanilla
--2 cups flour
--1/2 teaspoon baking soda
DIRECTIONS:
Emphasis added: No other wet ingredients like milk are added to this recipe.
Combine ingredients in a large bowl. Mix thoroughly, by hand if necessary, to get all of the flour off of the bottom of the bowl.
Preheat oven to 350 degrees. Place rounded teaspoons of the thick batter onto a greased cookie sheet. Bake for 8-10 minutes until lightly brown around the edges. Remove from heat. Sprinkle with colored sugar or cinnamon sugar. Cool on pieces of waxed paper.
