How To make Pasta with Chunky Tomato Sauce
1 1/2 c Diced onions
1/4 c Water or olive oil
3/4 c Chopped celery
1/2 c Chopped green bell pepper
2 c Sliced fresh mushrooms
2 Garlic cloves; minced
4 c Chopped fresh tomatoes
3 c Tomato sauce
2 c Tomato puree
1 ts Dried oregano
1 1/2 ts Dried basil
1 Bay leaf
Salt and pepper; to taste 1 lb Spaghetti or other pasta
Heat the water or olive oil in a large saucepan over medium heat. Cook the onions for 5 to 6 minutes, then add the celery, green pepper, mushrooms, and garlic and cook for an additional 5 minutes. Add the tomatoes, tomato sauce, and tomato puree and stir until the sauce is well blended. Add the herbs, salt, and pepper and simmer, uncovered, for 30 minutes. Cook the pasta according to package directions. Remove the bay leaf from the sauce and serve with pasta. This pasta recipe is very easy to make and with no use of cheese or cream and still tastes yummy.We have used drum wheat pasta for this recipe,unlike any other wheat, durum with is high in fiber and rich in important vitamins (such as A, B and E vitamins) and minerals. Its protein content is higher too. Due to this high protein content pasta made from durum wheat is really flexible - that's why it is an important ingredient in the Italian gastronomy.
Food Fact-Black olives has good source of vitamin-E and it contains monounsaturated fats which is associated with lower rates of colon cancer.These nutrients help prevent colon cancer by neutralizing free radicals. Olive oil's protective function also has a beneficial effect on ulcers and gastritis.A cup of black olives also contains 17% of the daily allowance of fiber, which promotes digestive tract health by helping to move food through the system at a healthier pace. It is also a good source of iron.
Pasta in Chunky Tomato Sauce
Serves-4
Ingredients
1 cup boiled drum wheat pasta
2 tbsp olive oil
4 big size tomato
(slit tomatoes and put it in boiling water for 5-10 mins,peel off then roughly chop.)
1 big size onion(thinly sliced)
1/2 green bell pepper(diced)
1/4 head cabbage(diced)
1/2 bunch spring onions(chopped)
1/4 cup sliced black olives
7 cloves garlic(chopped)
1/2 tbsp red chilli flakes
1 tbsp dry or fresh parsley
Instructions for how to boil pasta.
Bring water to a boil in a large pot and add salt, oil. When the water begin to boil rapidly, then add pasta and cook al dente.
Method
1.Heat the pan add 2 tbsp olive oil,stir in the chop garlic and saute for 30 seconds.Add thinly sliced onions,cook them until translucent.Now add red chilli flakes,salt to taste & parsley.Cook the sauce for few seconds then add diced capsicum and cabbage stir it well.
2.Add boiled pasta,sprinkle little more salt if needed,dry parsley,red chilli flakes,finally add sliced black olives stir it on high flame for few minutes.Serve hot when it is done,garnish it with spring onions.
