Date, Orange, & Cardamom Scones
These scones are delicious and fluffy on their own, or great paired with tea and jam. If you don’t like cardamom you can skip or sub for cinnamon (though cardamom and dates are a happy pair!). If your dates are not soft, make sure to soak them in hot water for 10 minutes. Enjoy!
Ingredients:
3 cups (390g) all purpose flour
6 tsp baking powder
¾ cup (170g) cold unsalted butter, cut into small cubes
1 tsp pure vanilla extract
1 tsp ground cardamom
1 tsp kosher salt
Zest and juice of 1 orange
1 cup (250ml) whole milk
1 cup (175g) chopped medjool dates (about 8-10 large)
1 tsp salt
½ cup (100g) brown sugar
1 egg and extra sugar (for topping)
1. Mix together the flour, baking powder, cardamom, and salt (use a bowl larger than mine :)).
2. Rub butter cubes into flour mixture with finger tips, until you form a damp rubble.
3. Mix in date pieces with your hands (make sure the pieces don’t clump).
4. Mix in sugar, orange zest, milk, and orange juice. Once a shaggy dough forms, turn out onto your surface.
5. Knead until combined and form a thick dough (about 2 inches / 5cm)
6. Cut out rounds with a cookie cutter (whatever shape you have works)
7. Place onto a lined baking sheet. Brush with egg wash and sprinkle with sugar.
6. Bake at 375F / 190C for 25 minutes, or until golden brown.
7. Serve alone or with labneh / clotted cream and jam. Enjoy!

Join 92-year-old CWA member Muriel Halsted through a short but sweet tour of her classic scone recipe. The CWA decided to bring their scones into the virtual world after the cancellation of the Sydney Royal Easter Show last month.
The group often sells as many as 50,000 scones, tea and coffee products created by its members at the show each year, but has now opted to selling PDF recipes following a $5 donation for a plate of virtual scones.

Orange Scones
2 ½ cups/300g all-purpose flour
3 tablespoons/39g sugar
1 tablespoon/14g baking powder
1/4 teaspoon/1g salt
1/2 cup/113g butter
2 eggs, beaten
3/4 cup/200ml whipping cream
1.5 teaspoon orange zest
Icing
1 Cup Powdered sugar
1/4 Cup Orange Juice
1 tsp Vanilla Extract
Step 1
Preheat oven to 400F/205C. In a large bowl combine flour, sugar, baking powder, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in center of flour mixture; set aside.
Step 2
In a medium bowl combine eggs, whipping cream, Greek yogurt and orange zest. Add egg mixture all at once to flour mixture. Using a fork, stir just until moistened.
Step 3
Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing dough for 10 to 12 strokes or until dough is nearly smooth. Divide dough in half. Pat or lightly roll half of the dough into a 6-inch circle. Cut each circle into 4 wedges.
Step 4
Place scones 2 inches apart on an ungreased or parchment-lined baking sheet. Brush scones with whipping cream or milk. Bake for 12 to 14 minutes or until golden. Remove scones from baking sheet.
Step 5 Making the icing
Combine powdered sugar, orange juice, and vanilla extract to make icing. Top scones with icing and serve them warm.
