How To make Oatmeal Cinnamon Scones
1/4 c Oatmeal
1 t Salt
1 3/4 c Flour
6 tb Butter, cut into 1/2-inch
-cubes 1/4 c Sugar
1 t Cinnamon
1/2 c Buttermilk OR:
1/2 c Cream OR:
1/2 c Milk
1/4 c Brown sugar, packed
1 lg Egg, beaten
1 1/2 ts Baking powder (dbl acting)
2 ts Vanilla extract
1 t Baking soda
1/8 ts Grated orange zest
Position rack in the center of the oven and preheat to 375 degrees. Into a large bowl, sift the flour,
sugars, baking powder, baking soda, and salt. Add oatmeal & mix together. Distribute the butter cubes over the flour mixture. Using your fingertips, quickly rub the butter cutes into the flour mixture, until the mixture resembles coarse meal. In a medium bowl, stir together the buttermilk, egg, vanilla, & zest. Add the liquid mixture to the flour mixture. With a large rubber spatula, using as few strokes as possible, stir gently until the dough is moistened and begins to cling together. Handling the dough as little as possible, stir until all the ingredients are completely combined. Using a 1/3-c. measuring cup, drop the dough onto an ungreased baking sheet, leaving at least 1-inch between the scones. Bake 16 to 18 minutes, until the scones are golden brown. Cool the scones on the baking sheet set on a wire rack for 5 minutes. Using a mental spatula, transfer the scones to the wire rack and cool completely. Serve warm or store completely cooled scones in an airtight container at room temperature.

Chocolate Pecan Scones
RECIPE COURTESY OF INA GARTEN
Yield: makes 14 to 16 large scones
Ingredients
3 tablespoons plus 4 cups all-purpose flour, divided
1 1/2 cups medium-diced bittersweet chocolate, such as Lindt (8 ounces)
1 cup chopped pecans
2 tablespoons sugar, plus additional for sprinkling
2 tablespoons baking powder
4 teaspoons kosher salt
3/4 pound cold unsalted butter, 1/2-inch diced
1 cup cold heavy cream
4 extra-large eggs, lightly beaten
1 egg beaten with 2 tablespoons water or cream, for egg wash
Directions
Preheat the oven to 400 degrees. Arrange two racks evenly spaced in the oven. Line two sheet pans with parchment paper.
In a small bowl, combine the 3 tablespoons flour with the chocolate and pecans and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, combine the 4 cups flour, the sugar, baking powder, and salt. Add the butter and, with the mixer on low speed, blend until the butter is the size of peas. Measure the cream in a 2-cup glass measuring cup, add the eggs, and beat until combined. With the mixer still on low, pour the wet mixture into the dry mixture and combine just until blended. Add the chocolate and pecan mixture and mix just until combined. The dough will be very sticky.
Dump the dough out onto a very well-floured surface and knead it a few times to be sure the chocolate and pecans are well distributed, adding a little flour so the dough doesn't stick to the board. Flour your hands and a rolling pin and roll the dough 3/4 to 1 inch thick. You should see lumps of butter in the dough. Cut the dough with a 3-inch plain round cutter and place the scones on the prepared sheet pans. Reroll the scraps and cut out more scones. Brush the tops with the egg wash, sprinkle with sugar, and bake for 20 minutes, switching the pans halfway through, until the tops are lightly browned and the insides are fully baked. Serve warm or at room temperature.
Cook’s Note
Pro tip: Cold bits of butter in the dough ensure flaky scones. When the heat hits the bits of butter, the water in the butter turns to steam and makes the dough rise.

These were dry. Very dry. Drier than the average scone. I do know that scones are generally dry but this was overly so. Oh, and no flavor.
2/3 c. butter, melted
1/3 c. milk
1 egg
1-1/2 c. all purpose flour
1-1/4 c. quick Quaker oats, uncooked
1/4 c. sugar
1 Tbsp. baking powder
1 tsp. cream of tartar
1/2 tsp. salt
1/2 c. raisins or currants
Preheat oven to 425 degrees Fahrenheit.
Add butter, milk and egg to combined dry ingredients; mix just until dry ingredients are moistened. Stir in raisins.
Shape dough to form ball; pat out on lightly floured surface to form an 8-inch circle. Cut into 8-12 wedges; bake on greasted cookie sheet in preheated hot oven 12-15 minutes or until light golden brown. Serve warm at breakfast or brunch with butter, preserves or honey, as desired.

Cranberry Oat Scones Recipe Demonstration - Joyofbaking.com
Recipe here:
Stephanie Jaworski of Joyofbaking.com demonstrates how to make Cranberry Oat Scones. These Cranberry Oat Scones are perfect on chilly mornings, as their texture is hearty due to the addition of rolled oats. There are no eggs in this scone recipe and instead of milk, I've used buttermilk, which gives the scones a more bread-like texture. I've also flavored the scones with orange zest and dried cranberries, but you could use dried cherries, raisins, or currants.
