8 oz Egg noodles 1/2 ts Salt MUSTARD BUTTER: 4 tb Unsalted butter 2 tb Dijon mustard 1 ts Fresh lemon juice Dash of cayenne pepper Small handful chopped fresh -parsley Bring 3 or 4 quarts of water to a boil. In the meantime prepare the mustard butter. Cream the butter with the remaining ingredients by hand, or use a food processor or blender. Add the noodles and salt to the boiling water. Cook the noodles until al dente. (The time needed will depend greatly upon the thickness of the noodles, so the best test is simply bite into a noodle to determine whether it is done.) A great one pan chicken dinner recipe that’s made under 30 minutes. The sauce has a smoky garlic flavour that’s so delicious. Another restaurant at home recipe!
It’s best to use chicken thighs as they have more flavour, plus they don’t go dry like the breasts can.
The chicken thigh pieces, must first be sauteed until they reach a nice golden brown colour. They need to be almost cooked through. Resting them aside will render them juicier while you continue the sauce in the same pan.
If you can’t use wine, simply leave it out, maybe add a little more chicken stock. Try and add the spinach leaves just before serving, this way, they stay nice and green. If preparing in advance, don’t add the spinach leaves at all. Simply add them in, upon reheating.
Use a good stainless steel or cast iron pan for best results. Enjoy this version of Chicken Dijonnaise!

I used to make this a long time ago, but in the form of a lasagne. This simplifies recipe takes just 40 minutes and serves 2 people easily, with leftovers. The sauce is quite strong and rich, so you can add vegetables to it if you wish.
4 tbsp butter 1 large red onion chopped roughly 3 tbsp plain flour 400ml non fat milk 200 grams of tuna chunks flaked after draining 2 tbsp hot English mustard 1 tbsp whole grain mustard 2 cups of grated cheddar cheese 250gms of cooked penne pasta Salt for pasta water Ground black pepper
