1 SAURKRAUT 1 BEER 1 MASHED POTATOES 1 PORK ROAST 1 HOT DOGS WITH SKIN Put the pork roast in a roasting pan on a RACK. Fill the roasting pan with saurkraut and cover. At midnight on New Year's Eve put it into a 175 f oven. When you wake in the morning (on New Year's Day) check to see if the pork roast is dry. If it is add beer; either way, let it cook until noon. At noon bury the hot dogs in the saurkraut for 15-30 minutes and serve hot dogs with saurkraut. Let the roast cook for 4-5 more hours. Make mashed potatoes and spread the pork and saurkraut all over the whole works. Eat. *If you use hotdogs without skin they will fall apart.

Pork Sauerkraut and Mashed Potatoes
This is a traditional PA Dutch recipe that I have every year on New Years Day. The reason we ate pork and not chicken is because when a pig digs he moves dirt forwards and when a chicken digs they move dirt backwards. We want the new year to be looking forward like the pig. The roast cooks on low for 8 hours in the crock pot and it is served with mashed potatoes. We always ate it with the mashed potatoes on the plate - make a well in the potatoes and the pork and sauerkraut go on top. Each bite needs all three things on the fork.

Recipe: 2-3 pound pork loin
salt and pepper 16 ounces sauerkraut, drained of extra liquid
1 cup apple juice for 6 qt and 1.5 cups for 8 qt. 1 apple sliced
1 onion sliced
2 cloves crushed garlic
INSTRUCTIONS
Cut the pork loin into 2 inch large chunks. Liberally season pork loin with salt and pepper on all sides. Place pork in pressure cooker. Top with apples, apples, onions, and garlic. Add in apple juice to pressure cooker. Top with sauerkraut. Cook on high pressure for 15 minutes. Once cook time has elapsed allow pressure to release naturally, or for at least 15 minutes.

Slow Roasted Pork Roast with Sauerkraut
How to make a delicious, flavorful and healthy pork roast.
Preheat oven to 325 degrees. Use rack in the middle.
Directions:
1. Remove excess fat from roast. 2. Lightly salt and pepper roast. 3. Put 2 Tablespoons of oil in preheated Dutch oven, over medium heat. 4. Sear / brown roast on all sides. 5. Place sauerkraut, onion and garlic on and around roast. 6. Sprinkle on onion soup mix, brown sugar, dry mustard and dried thyme. 7. Add 2 cups water and 1/2 cup fresh apple cider. Cover tightly with lid. 8. Slow roast in oven at 325 degrees, for 2-3 hours or until tender. 9. Remove from oven and carefully and place roast on platter. 10. Tent with foil- to cool before serving.
