✅Ingredients
• 8 ounces spaghetti
• 2 tablespoons butter
• 1 medium white onion, diced
• 1 green bell pepper, diced
• 2 cloves garlic, minced
• ¼ cup all-purpose flour
• 2 cups milk
• 3 cups shredded cheddar cheese, divided
• 15 ounces canned diced tomatoes, drained
• 4 ounces canned diced green chiles, drained
• 2 cups cooked diced chicken
• ½ teaspoon salt
• ½ teaspoon black pepper

1️⃣ 00:29 - Preheat oven to 350 degrees. Cook spaghetti in a saucepan according to package directions.
2️⃣ 00:45 - Meanwhile, melt butter in a large pot over medium-high heat. Add in onion and bell pepper and cook until softened, about 5-7 minutes.
3️⃣ 01:08 - Add in garlic and flour and continue to cook 2 more minutes. Slowly stir in milk and bring to a simmer until thickened. Once the sauce thickens, immediately remove from heat.
4️⃣ 01:35 - Stir in 2 cups cheddar cheese until melted and smooth. Then stir in diced tomatoes, diced green chilis, diced cooked chicken, and drained spaghetti. Season with salt and pepper to taste.
5️⃣ 02:10 - Pour pasta into a lightly greased 9x13 pan. Top with remaining 1 cup cheddar cheese. Bake in the preheated oven for 25 to 30 minutes until cheese is warm and bubbly and starting to brown.

INGREDIENTS
2 cups shredded pre-cooked chicken (1/2 rotisserie chicken)
1 10 oz. can Rotel (diced tomatoes with green chiles)
1/2 lb. fusili pasta
2 cups chicken broth
1/3 cup BBQ sauce
1 cup shredded Monterey Jack cheese
3 slices bacon
2 green onions, sliced
INSTRUCTIONS
1. Place the chicken, pasta, and Rotel tomatoes (undrained) in a large skillet. Add two cups of chicken broth and stir to combine. Cover the skillet with a tight fitting lid, turn the heat on to high, and let it come to a boil. Once it reaches a boil, reduce the heat to low and let it simmer for 15 minutes, giving it a quick stir every 5 minutes or so.
2. Meanwhile, cook the bacon in a skillet until brown and crispy. Drain the cooked bacon on a paper towel, then crumble into pieces.
3. After simmering for 15 minutes, the pasta should be tender and most of the liquid absorbed. If the pasta is still firm, let the skillet simmer for 5 more minutes. If the pasta is tender, but there is still a lot of liquid in the skillet, let it simmer without a lid for 5 more minutes.
4. Once the pasta is cooked and most of the liquid is absorbed, drizzle the BBQ sauce over top.
5. Sprinkle the shredded cheese over the BBQ sauce and cover the skillet with the lid. Leave the heat set on low and let the skillet sit for five minutes to melt the cheese. Once the cheese is melted, top with the crumbled bacon and sliced green onions, then serve.

Monterey Spaghetti Casserole
Ingredients:
4 ounces spaghetti, noodles broken into 2-inch pieces
1 large egg
1 cup sour cream
1/4 cup parmesan cheese, grated
1/4 teaspoon garlic powder
2 cups Monterey Jack cheese, shredded
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 (2.8-ounce) can french-fried onions, divided
Directions:
Preheat the oven to 350 degrees F.
Grease a 2-quart baking dish.
Cook the spaghetti until al dente according to the package directions.
In a large bowl, beat the egg.
Add the sour cream, parmesan cheese, and garlic powder.
Drain the spaghetti.
Add the spaghetti, Monterey Jack cheese, spinach, and 1/2 of the onions to the egg mixture.
Pour the mixture into the prepared baking dish.
Bake, covered, until heated through, for about 30 minutes.
Top the mixture with the remaining onions.
Bake until the onions are golden brown, about 5 minutes.
