How To make Minestrone Parmesan
1/4 c olive oil 1/2 c corn 1 c minced onion 1 c diced raw white potatoes 2 cloves garlic, minced 1 c cooked garbanzo beans 1/4 c minced cilantro 1 c uncooked small pasta 3 c finely diced smoked ham (macaroni or smaller) 4 quarts beef broth, boiling 2 c shredded fresh spinach 1 c diced tomatoes freshly ground pepper, to taste 1 c diced carrots freshly grated Parmesan cheese, 1 c diced celery to taste Heat oil in a large stockpot and saute onions, garlic, cilantro, and smoked ham until onions are soft. Add boiling beef broth and simmer on medium-low heat for 20 minutes. Add tomatoes, carrots, celery, corn, potatoes, and garbanzo beans all at once. Cover and barely simmer until vegetables are tender. Add pasta and cook until pasta is al dente. Season with pepper. Stir in freshly grated Parmesan cheese and serve hot.

Olive oil
2 onions
4 garlic cloves (pressed)
2 small carrots (diced)
3 stick of celery (diced)
12 pieces of green beans (diced)
6-8 Mini bell peppers (diced)
1 zucchini (diced)
1 yellow squash (diced)
1 can of northern beans (rinsed)
1 can of crushed tomatoes
2 tsp tomato paste
Chicken broth (unsalted)
1 sweet potato (diced)
About 1 cup Elbow pasta
1 tbsp Worcestershire Sause
1 tsp Italian herb paste (or Italian dry herb)
1/2 tap Black pepper
1/2 tsp Red pepper flakes
1 full tsp Salt
1 -2 cups roughly chopped Spinach
1-2 tbsp parsley (finely chopped)
Parmesan Cheese for topping

1 medium onion - diced
2 ribs celery - diced
2-3 medium carrots - diced
1 teaspoon (~2 grams) dried oregano
3 ounces (84 grams) tomato paste
8 ounces (226 grams) canned plum tomatoes hand crushed
8 ounces (226 grams) baby spinach
8 cups (1890 grams) water
16 ounces (454 grams) brown or green lentils see notes below

Zutaten für ca. 6 Personen:
2 Stk Karotte
500 gKartoffel
1 Stk Zucchini
1 Stk Zwiebel
0,25 Stk Sellerie
0,25 StkWeißkohl
100 g grüne Bohnen
100 gweiße Bohnen
0,25 Stk Lauch
1000 ml Brühe (Gemüse)
500 ml Wasser
1 Stk Knoblauchzehe
100 g Parmesan
20 g Tomatenmark
1 TL Oregano
Olivenöl (zum Anschwitzen)
Salz (zum Abschmecken)
Pfeffer (zum Abschmecken)
Zubereitungsschritte:
Kartoffeln schälen und würfen
Karotten und Sellerie schälen und ebenfalls würfeln
Buschbohnen hinten und vorne anschneiden und in 3 Teile schneiden
Zucchini, Weißkraut und Lauch waschen und würfeln
Zwiebel und Knoblauch fein würfeln
Parmesan fein reiben
Olivenöl erhitzen, Knoblauch und Zwiebeln zufügen und glasig anschwitzen
Kartoffeln, Sellerie, Karotten und Bohnen zufügen - mit Salz und Pfeffer würzen und 4-5 Min. weiter anschwitzen
restliches Gemüse hinzufügen, kurz mit braten - Tomatenmark zufügen und mit anbraten und mit Oregano würzen
Gemüsebrühe und Wasser zufügen und alles ca. 30 Min. kochen lassen
Bohnen dazugeben und gut abschmecken
