How to make coffee bun/coffee bun recipe/모카번만들기/rotiboy/paparoti
Let's make a delicious coffee bun.
Ingredient (10 minutes)
Water 110g, Instant dry yeast 7g, Sugar 35g, Salt 7g, Milk 100g,Bread Flour 350g , Butter 20g
Rechargeable: Salted butter 5gx10ea (You may add a little salt to unsalted butter)
Mocha Topping: 60g butter, 60g sugar, 70g wheat flour (All-purpose flour), 1 egg, coffee liquid (3t instant coffee powder + 2t water) (use 3 tea bags)
TIP.
Water and milk temperature:
Cold water in summer
In winter, turn it on a microwave oven for 30-40 seconds before use (Never use hot water.)
Bake 170-180°C (338-356°F)/8-12 minutes in a preheated oven (depending on oven specifications)

INGREDIENTS
4 fl oz (118 ml) warm evaporated milk
1/2 tsp sugar (for milk)
2 1/4 tsp (7 g) dry active yeast
4 cups (500 g) all purpose flour ( I used bread flour)
2/3 cup (125 g) sugar
1 tsp (5 g) salt
1/2 tsp lemon zest (optional)
1/4 tsp ground cinnamon (optional)
1/4 tsp ground anise (optional)
3 large eggs (room temperature)
1 Tbsp vanilla extract
8 Tbsp (113 g) unsalted butter (softened)
TOPPING
1 1/4 cup (145 g) confectioner's sugar
1 cup (130 g) all purpose flour
1/4 tsp vanilla extract
8 Tbsp (113 g) unsalted butter
BAKE @ 350ºF / 176 ºC for 18 to 20 minutes

O.M.G. these buns are SO delicious you've got to try them! These fluffy, buttery buns are topped with a coffee scented cookie crust, and they became wildly popular in Southeast Asia. Rotiboy, which started in Malaysia, is perhaps the most well known brand that specializes in these buns, but since then there have been a few others. But once you know how to make the basic fluffy milk bread dough (recipe linked below), the rest is quite easy!

INGREDIENTS
3 1/2 cups (455 g) all-purpose flour
2 tsp dry active yeast
1 Tbsp (14 g) sugar
2 tsp (10 g) salt
1 Tbsp (15 ml) cooking oil
1 1/4 cup (295 ml) warm water
Preheat oven @450 ºF / 232 ºC and bake for 10 minutes, then lower oven temperature to 400 ºF / 204 ºC and continue baking for 10 to 12 minutes
