How To make Mexican Baked Beans
2 c Dried white beans
Water 3 Jalapeno peppers, chopped
1 Green or red pepper, chopped
1 Onion, chopped
1 ts Garlic powder (or 2-3 minced
-cloves garlic) 29 oz Can crushed tomatoes
1 1/2 tb Chili powder
1 ts Cumin
1/4 c Molasses
Salt and pepper to taste Cover the beans with water and soak overnight. In the morning, drain the beans and cover with fresh water. Bring to a boil, then simmer for about an hour. Place the peppers, onion, garlic powder or garlic in a saucepan and heat, covered, over low heat (no need for oil, the vegetable juices that are released will keep everything from sticking to the pan.) Add the tomatoes and spices and molasses, and simmer for about ten minutes, stirring occasionally. Preheat the oven to 375 degrees. Drain the beans and place them in a large casserole dish. Pour the tomato mixture over, and stir gently until beans and sauce are mixed. Bake, uncovered, for 3 hours, until mixture is no longer soupy, and beans are soft. Serves 6. Served with 1/2 cup of rice, you have a complete protein, and the dish racks up only 446 calories per serving and a measly 1.35 g fat. Another suggestion would be to use cooked corn - it adds the same number of calories as the rice, and only 1 g fat to the existing 1 and a smidge. And it's yummy, too.

Easy Refried Bean Dip
Easy to make refried bean dip is so delicious you won’t be able to stop eating. With simple ingredients it comes together in less than 10 minutes.
Prep Time: 5 minutes
Cook Time: 18 minutes
Servings: 12 servings
Ingredients
16oz refried bean (canned or homemade)
4oz cream cheese (softened)
½ cup sour cream
4 teaspoon taco seasoning
¼ cup mild green chilies (drained and chopped)
¼ cup jalapenos (deseeded and chopped) – adjust quantity according to your taste preference
2 green onion, white and green part separately chopped
1 ½ cup Monterey Jack cheese, freshly grated, divided
1 ½ cup sharp cheddar cheese, freshly grated, divided
For Garnish
Fresh cilantro
Green onion
Pico De Gallo (optional)
Few Jalapeno slices
Instructions
1. Pre-heat oven at 350°F. In a bowl add refried bean, softened cream cheese, sour cream and taco seasoning. Using a stand mixer or a hand blender or whisk beat it together until combined. You want to have a smooth mix.
2. Add mild green chilies (drained and chopped), jalapenos (if using), white part of green onion and half of both Monterey Jack and sharp cheddar cheese.
3. Mix it all together.
4. Use any baking dish such as 8x8 inch square dish or 2qt baking dish. Grease it with cooking spray (optional).
5. Spread bean dip mix on the dish.
6. Sprinkle remaining cheese on top evenly.
7. Bake in pre heated oven at 350°F for 18 to 20 minutes or until hot and cheese is melted and bubbly.
8. Serve hot with tortilla chips. You can also use protein-rich refried bean dip in other Mexican dishes such as tacos, enchiladas and burritos. Also spread them on quesadilla or on top of a tostada. It’s delicious anyway you serve!
