How To make Meringue Pecan Pie
3 Egg Whites
1 C Sugar
1/2 Tsp Baking Powder
1 Tsp Vanilla
20 Ritz Crackers
1/2 C Pecans
chopped

Beat egg whites until very stiff; slowly add sugar, baking powder, and vanilla. Break the crackers into pieces about the size of a pea, and stir by hand into the meringue mixture. Add the pecans. Pour into a well-buttered 9" pie pan. Be sure to butter the edge and rim of the pan. Bake at 350

PECAN PIE RECIPE
Ingredients
Pie Crust
1 2/3 Cup / 200 g Flour
2-3 Tbsp Sugar
1/2 tsp Salt
1 Stick / 113g Butter
2-3 Tbsp Ice Water
Pecan Pie Filling
1/4 Cup / 55g Butter, melted
1 1/2 Cups / 300g Brown Sugar
1/2 Cup / 125ml Syrup, corn syrup, glucose syrup , golden syrup
1 tsp Vanilla Essence
1/2 tsp Mixed Spice
3 Eggs
2 Cups / 200g Pecans roughly chopped
Instructions
Pie Crust
Add the flour, salt and sugar if using to a large mixing bowl. Cut the butter into small cubes and add to the mixing bowl. Use clean dry hands to rub the butter into the flour until the pieces of butter are no larger than a pea.
Spoon in a few tablespoons of ice water and mix the pastry with a knife. Form the dough into a ball and knead for 30 seconds on a floured surface until smooth.
Wrap the pastry in plastic wrap and place in the fridge for at least 30 minutes to rest.
Pie Filling
In a medium sized mixing bowl combine the butter, sugar, syrup, vanilla and mixed spice.
Crack one egg into the bowl with the other ingredients and mix to combine. Continue with the next two. Adding one egg separately helps to loosen the batter making the next two eggs easier to incorporate.
Roll out your pie crust to 1/2 cm or 1/4 thick. Place the dough into a 9 pie dish and cut off any excess. Use your thumbs and finger or just a fork to decorate the edge of pie crust.
Pour the roughly chopped pecans into the pie dish, followed by the pie filling.
Bake the pecan pie in a 180C / 350F oven for 50-60 minutes or until it only slightly jiggles in the center. Leave the pie to cool completely at room temperature before transferring to the fridge overnight.
To serve the pie cut slices and top with whipped cream or vanilla ice cream.

Pecan Meringue Pie~~Fall Pie Collaboration
Hi y'all! Well for my second pie in this collaboration with the wonderful ladies I wanted to try a recipe with pecans. Pecans are so wonderful in desserts I think and this crust sounded very interesting to me. Well let me say that I am so glad I gave this a try. This pie is delicious. It was even better after it sat in the fridge overnight. I think you would like this dessert especially if you love pecans. The crust comes out crispy on the outside and soft and chewy on the inside just so so good. I want to thank Vickie at Vickie's Country Home for tagging me . Also, Helga from Helga's Pennsylvania Cooking for tagging me. Tammy at Little Jordan Farm and Mrs Lori at Whippoorwill Holler. 3 lg egg whites
1/4 tsp cream of tartar
1 cup sugar
1 tsp vanilla extract
1 cup graham cracker crumbs
1 cup chopped pecans
Topping:
1 cup heavy cream
2 tbsp whipped cream cheese, softened and optional
3 to 4 tbsp sugar
1/2 tsp vanilla extract
chopped pecans for garnish
Bake the meringue crust at 350 for about 25 to 30 minutes

One of my favorite recipes, Pecan Pie is an entirely delicious dessert made with buttery pecans in a rich, creamy sweet filling and topped with extra toasty pecans. This recipe is made easy by using premade pie dough and simple ingredients.
Pecan Pie
1 refrigerated pie crust or homemade
2 cups pecan chopped

1 cup dark corn syrup
1/3 cup brown sugar
4 tbsp unsalted butter
1/2 tsp salt
