How To make Mennonite Bread
2 packages active dry yeast
2 cups water -- 105-115 degrees
2 cups buttermilk
1/4 cup vegetable oil
1/2 cup honey
1/4 cup wheat germ
1 cup rye flour
4 cups whole wheat flour
bread flour
In a large mixing bowl, dissolve the yeast in 1 cup of the warm water. Let stand 5 mins. until yeast foams. Stir in the salt, oil, honey, remaining water, and buttermilk. Mix in the rye flour, wheat germ, and whole wheat flour; beat well. Add bread flour, 1 cup at a time, beating well until stiff dough forms. Turn dough out onto lightly floured board and knead until smooth and elastic, about 10 mins., adding additional bread flour as needed. Wash bowl, grease it, and add dough to bowl. Turn over to grease top of dough. Cover and let rise in a warm place until doubled. Grease four 81/2" bread pans. punch dough down. Divide into 4 parts. Shape each into a loaf and place in pans. Cover loosely. Let rise until about doubled. Bake in preheated 375 degree oven for approx. 40 mins.

Heidi’s Homemade Bread:
Makes five 8x4 inch loaves
1 cup sugar
1 Tbsp. salt
3 Tbsp. Active Dry yeast
1/2 cup instant potato flakes
1/2 cup oil (I use avocado oil)
4 cups warm water
Combine in mixer bowl and let set for 10 minutes until the
yeast blooms.
Then add in
11 cups bread flour
and let mixer run for 8 minutes.
Place dough in a large greased bowl, cover, and let rise in a
warm oven with the light turned on, for 1 hour or until
double in size.
Divide dough into 5 loaves, then shape until surface
is nice and tight, and place in greased loaf pan.
Prick through with a fork a few times to break
largest air pockets to ensure a nice crumb.
Cover and let rise again until loaves are full and
about one inch over the top of the pan.
Bake at 350° for 20 minutes or golden.
Remove loaves carefully to cooling racks, and brush
tops with butter.
Once slightly cool, place in bread bags and loosely
close the ends to keep bread nice and moist.
When cooled completely, close ends with twisties,
and freeze extra loaves and pull out and slice as
needed.
Keeps in the freezer for at least two months.

Chicken Corn Chowder Soup
3-4 c. cooked, diced chicken
Cook together :
4 c. chicken broth
2 c. chopped celery
2 c. chopped carrots
2 c. chopped potatoes
2 tsp minced garlic (added at the end of vegetable cooking)
1/4 cup finely chopped onion
1 can corn or less
¼ c. butter
1 tsp. salt
1 tsp Farm Dust seasoning. (Or sub with garlic salt)
Once these are soft add in :
4 c. milk, divided (save one cup to mix with flour then pour into soup once it’s ready to be thickened
¾ c. flour (this is mixed with milk) Once this is all thickened, add:
2 c. Velveeta cheese
Only cook until cheese is melted
Enjoy!
Serves around 18-20 people
Whoopie Recipe.
I would add 3/4 to 1 cup more flour. The recipe I used is the first one they listed. I also added vanilla.
Filling For Cookies
1 cup crisco or margarine. Crisco if you want it white
2 1/2 cups powdered sugar
3 tsp vanilla
2 T water
8 oz marshmallow cream
Pumpkin Whoopie Pies:
1 3/4 cup brown sugar
1 cup veg oil
1 1/2 cup pumpkin
2 eggs
2 3/4 cup flour
1 tsp. Baking powder
1 tsp soda
1 tsp Vanilla
1 1/2 tsp cinnamon
1 tsp nutmeg
1 tsp salt
Cream the oil & sugar. Then add eggs, pumpkin & vanilla and mix well.
Add sifted dry ingredients to that. Drop onto greased Cookie sheet and flatten slightly. Bake at 350 for 10 minutes or so. Add your filling in between. Enjoy!

My favourite banana bread recipe. So delicious!

Ingredients:
1 3/4 cups flour
1 1/2 cups sugar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
2 ripe bananas, mashed (1 cup)
1/2 cup vegetable oil
1/4 cup plus 1 tbsp. buttermilk (I used yogurt)
1 tsp. vanilla
In a large bowl, sift together flour, sugar, soda, and salt. In another mixing bowl, combine eggs, bananas, oil, buttermilk, and vanilla. Add to flour mixture, stirring just until combined. Pour into a greased loaf pan. Bake at 325 F for 1 hour and 20 minutes or until bread tests done. Yield: 1 loaf.
