Spaghetti with meatballs is an extremely delectable Italian-American dish that usually consists of spaghetti, tomato sauce and meatballs. Chef Shantanu Gupte brings you this easy and delicious meatballs pasta recipe, where the meatballs are simmered in an Italian tomato sauce.
Ingredients:
150 – 200 grams beef/chicken/lamb mince
1 egg
4 tbsp. bread crumbs
garlic – finely chopped
1 tbsp. mustard sauce
salt & pepper to taste
1 cup golden fried onion
1 red chilli – finely chopped
2 twigs of rosemary leaves – finely chopped
3-4 tbsp olive oil
1 dollop of butter
For sauce:
olive oil
2 blanched tomatoes
canned tomatoes
tomato puree
2 garlic – finely chopped
1 red chilli
1 onion – finely chopped
chopped parsley
For garnish:
grated cheese
Method:
To make meatballs:
- In a bowl, add the beef mince, egg, bread crumbs, finely chopped garlic, cracked pepper, mustard sauce, salt to taste, golden fried onions and finely chopped red chilli and mix the ingredients thoroughly.
- Add the chopped rosemary leaves to the above mixture and mix the ingredients well with your hands.
- Put the pan on a medium flame and rub little oil on your palms. Make small balls using the meat mixture.
- Add oil in the pan and a dollop of butter. Once it starts heating, add the meatballs to the pan.
- Roll the meat balls slightly. Cook the balls on a medium flame.
To make the sauce:
- Boil the tomatoes in hot water for 1 minute and then peel off their skin.
- Cut the tomatoes in small pieces.
- Heat olive oil in a pan and add the chopped garlic, red chilli, chopped onion, tomato pieces, canned chopped tomatoes and tomato puree/juice, mix them well and let them cook.
- Add salt and pepper to taste and water (if required) to the tomato sauce.
- Add the meatballs (75% cooked) in the tomato sauce for the rest of the cooking part.
- Add fresh basil leaves to the tomato sauce.
To make spaghetti:
- Heat olive oil in a pan and add the chopped garlic in it.
- Add the boiled spaghetti to the above ingredients and sprinkle little water over it.
- Add salt and pepper to taste along with green chopped parsley and give it a nice toss.
For plating:
- Add the spaghetti right at the centre of the plate and place the meatballs with tomato sauce on the remaining two sides of the plate. Grate some cheese over the spaghetti with meatballs.

Beef Stroganoff Meatballs | Everyday Food with Sarah Carey
In the October issue, we have a really fun feature called On Top of Spaghetti, with meatball versions of classic dishes like chicken Parmesan and shrimp scampi. Today I'm going to show you one of my favorites, Beef Stroganoff Meatballs. They have the same delicious flavors as classic Stroganoff -- beef, mushrooms, sour cream, and fresh dill -- but in a meatball form.
Sarah's Tip of the Day:
One of the things I like best about this recipe is that you don't need to brown the meatballs in batches in a skillet. All that work's done on a sheet pan in your oven. Check out the video, and I'll show you the easiest way to assemble the meatballs and how to keep them as tender as they can be. I'll also tell you the trick for incorporating the sour cream so it doesn't break. Mmm, I can't wait to eat this!

How to Make Porcupine Meatballs: Noreen's Kitchen
Greetings! Remember back to New Year's day when I made my annual stuffed cabbage dinner and had about 2 pounds of meat/rice mixture leftover? I doubled bagged it and froze it. Dinner tonight will be porcupine meatballs made from that meat mixture. If you don't have any leftover meat mixture like this, don't worry, simply use 2 pounds of ground meat. I like to mix beef and pork but you could use all beef, all pork, ground turkey, whatever! You can find the full recipe and instructions on my website.
This dinner was quick to put together and all I had to do while it was in the oven was make some mashed potatoes and a green salad. These are wonderful comfort food. I know that there is a double starch, but who cares!? These are filling and they go a long way. This dish will feed a family of 4 for two dinners! That is a lot of food for a little work.
I have used a family size can of tomato soup here, because I like the way it tastes and it does not need any extra ingredients. You don't have to use the soup, you could just bake these up in some tomato juice or all crushed tomatoes for that matter would be fine. No matter how you choose to do it, they will turn out great. The rice absorbs all the liquid so you will want to make sure that you have enough liquid in the pan, otherwise you may end up with a charred mess in the end.
I hope you give this one a try and I know that you will love it!
Happy Eating!
