How To make Red Beans and Rice(Chef Du Jour)

1/2 lb light red kidney beans
1/2 c yellow onions,
diced
1/4 c green onions, :
sliced
1/4 c red onions, diced
1 c celery, :
chopped
1 jalapeno pepper, seeded
: and diced 1 bay leaf
1 pn white pepper
1 ts Paul Prudhomme's Pork Magic
3/4 ts dried oregano
3/4 ts dried basil
1 grind fresh black pepper
1 pn crushed red pepper
1 TB roasted garlic
1 lb Andouille sausage, :
sliced
: and sauteed 1/4 c Tasso ham, diced and
: sauteed 1/4 c pickled pork, boiled with
: seafood boil :
and : shredded 1 TB file powder
Cover the beans with cold water and soak them overnight. Drain them. In a 4 quart pot add all the vegetables and spices and cook over low heat until they are soft, about 10 to 15 minutes. Then add the beans and meat, cover with water and cook over high heat for 1 hour. Turn the heat down and simmer for 40 more minutes. Stir in file powder and cook 2 more minutes to thicken. Chinese SHRIMP FRIED RICE recipe under 30 minutes! You will never do take out again! Mansa Queen
Save this recipe for whenever you have leftover white rice and need to make dinner quickly under 30 minutes! Once you master this recipe, you will never do Chinese take out again, it’s that easy and delicious! Adjust all ingredients to your preference especially the sauces. Enjoy!

Ingredients I used
8 cups of cooked day old jasmine rice ( 4 cups uncooked)
1-1.5 lbs raw shrimps
1 cup julienned carrots
1 small diced yellow onion (optional)
Dark soy sauce
Regular / low-sodium soy sauce
Oyster sauce
1 Tbsp crushed garlic
1 Tbsp sesame seed oil
2 eggs scrambled
2 Tbsp butter for the eggs
Vegetable oil
Salt
Black pepper
Chili pepper flakes
3/4 cup chopped spring onions for garnish
Note: cook the rice at least a day before and refrigerate overnight. I froze mine for about 1 hour before cooking. Make sure to break any lumps in the rice before adding it to the wok ( trust me, your arms will thank me lol). Add the spring onions after you turn off the heat to avoid wilting. It’s just for garnishing and added flavor.
