3/4 pound skinless -- boneless chicken,
thinly sliced 1 tablespoon cooking oil
1 teaspoon minced ginger
1 cup cantaloupe balls
1 cup honeydew melon balls
1 tablespoon honey
2 teaspoons lemon juice
1 Dash sesame oil
MARINADE 1 tablespoon dry sherry
1 teaspoon cornstarch
1/4 teaspoon salt
Combine chicken and marinade ingredients in a medium bowl; stir to coat. Set aside for 30 minutes. Heat a wok over high heat until hot. Add cooking oil, swirling to coat sides.
Add chicken and ginger; stir fry for 2 minutes or until chicken turns opaque. Add melon balls, honey and lemon juice, cook until heated through. Stir in sesame oil. Serve hot.

New Skill Saturday: How to Make Cornbread with Masa Harina
Follow along with this baking tutorial to make delicious cornbread at home.
INGREDIENTS:
1 ½ cup masa harina
½ cup all purpose flour
6 T butter
2 T baking powder
1 t salt
1 ¼ c milk
¼ c maple syrup
2 eggs
Chopped pickled jalapenos to taste, with 2 tablespoons of brine
Additional sliced peppers for garnish (optional)
DIRECTIONS:
- Preheat oven to 425 F. If using a cast iron skillet, place it in the oven to preheat.
- In a bowl, combine dry ingredients.
- Measure the milk and syrup in a bowl, add eggs and whisk. Once incorporated, add 4 tablespoons of the melted butter. Whisk again.
- Add the wet ingredients and and chopped jalapenos with brine to dry ingredients and whisk until the flour is just moistened. Do not overmix.
- Remove the pan from the oven and add the melted butter. Swirl it around in the pan to coat the bottom and sides evenly. Scrape the batter into the baking dish and spread it out with a spatula. Garnish with sliced peppers (optional).
- Bake 20-25 minutes or until the edges are golden brown and a knife inserted into the center comes out clean.

1 1/2 C. Maseca Nixta masa instant corn flour (lightly packed)
1/4 tsp salt
1 1/4 C. Warm water (could be a pinch less or more)
TIPS—————————-
1. Griddle set at Med/high heat
2. If you see cracks in masa when making balls it's because it’s too dry, add more water 1 tsp at a time
3. They puff up better if not too thick
4. Always keep masa and balls covered
5. Adjust heat if using cast iron
6. Balls size like a golf ball or little smaller
