How To make Masa Biscuits
3 3/4 cups Unbleached all-purpose flour
1 1/2 cups Masa harina de maiz
2 tablespoons Plus 1 teaspoon baking
powder
1 teaspoon Salt
1 Stick (4 oz.) unsalted :
butter, well chilled
Cut into small pieces 1/2 cup Solid vegetable shortening well chilled
And cut into small pieces 2 cups Cultured buttermilk :
chilled
Position racks in the upper and middle thirds of the oven and preheat the oven to 450^F.
In a large bowl, stir together 3 1/2 cups of the flour, the masa, baking powde r, and salt. With a pastry cutter, blend in the butter and shortening until the mixture resembles a coarse and slightly lumpy meal. Stir in the buttermilk unti l a soft, crumbly dough is formed. Sprinkle the work surface with half of the remaining flour. Turn the dough out, gather it into a ball, and briefly knead i t, just until it holds together. Flatten the dough, sprinkle it with the rest of t he flour, and roll it out about 1-inch thick. With a round 3-inch cutter, form th e biscuits, transferring them to 2 ungreased baking sheets and spacing them about 2-inches apart. Gather the scraps into a ball, roll it out to 1-inch thick, and cut out the remaining biscuits.
Set the baking sheets on the racks and bake about 15 minutes, exchanging the position of the sheets on the racks from top to bottom and from front to back a t the halfway point, or until the biscuits are golden and crisp. Serve hot or war m. Makes 12.
Author's Comments: These jumbo, Texas-size biscuits include a generous measur e of masa harina de maiz, the specially treated ground corn that is the basis for tortillas, tamales, and other Southwestern staples. Because the masa contains no gluten, these biscuits are remarkably tender, with a distinctive but subtle flavor like that of a corn tortilla. They're particularl y good split, buttered, and topped with jalapeno jelly.

How to Make Homemade Biscuits from Scratch (Just 6 ingredients!)
Buttery, soft, and made completely from scratch, this easy homemade biscuit recipe deserves a permanent place in your recipe repertoire.

Ingredients
2 cups all-purpose flour (250g)
1 Tablespoon baking powder
1 Tablespoon granulated sugar
1 teaspoon salt
6 Tablespoons unsalted butter very cold (85g), unsalted European butter is ideal, but not required
3/4 cup whole milk (177ml)
Instructions
00:00 Introduction
For best results, chill your butter in the freezer for 10-20 minutes before beginning this recipe. It's ideal that the butter is very cold for light, flaky, buttery biscuits.
00:24 Preheat oven to 425F and line a cookie sheet with nonstick parchment paper. Set aside.
00:29 Combine flour, baking powder, sugar, and salt in a large bowl and mix well. Set aside.
00:48 Remove your butter from the refrigerator and either cut it into your flour mixture using a pastry cutter or (preferred) use a box grater to shred the butter into small pieces and then add to the flour mixture and stir. Cut the butter or combine the grated butter until the mixture resembles coarse crumbs.
02:06 Add milk, use a wooden spoon or spatula to stir until combined (don't over-work the dough).
02:25 Transfer your biscuit dough to a well-floured surface and use your hands to gently work the dough together. If the dough is too sticky, add flour until it is manageable.
Once the dough is cohesive, fold in half over itself and use your hands to gently flatten layers together. Rotate the dough 90 degrees and fold in half again, repeating this step 5-6 times but taking care to not overwork the dough.
02:47 Use your hands (do not use a rolling pin) to flatten the dough to 1 thick and lightly dust a 2 3/4 round biscuit cutter with flour.
Making close cuts, press the biscuit cutter straight down into the dough and drop the biscuit onto your prepared baking sheet.
Repeat until you have gotten as many biscuits as possible and place less than 1/2 apart on baking sheet.
Once you have gotten as many biscuits as possible out of the dough, gently re-work the dough to get out another biscuit or two until you have at least 6 biscuits.
03:24 Bake on 425F for 12 minutes or until tops are beginning to just turn lightly golden brown.
If desired, brush with melted salted butter immediately after removing from oven. Serve warm and enjoy.

I was so excited when I tasted these cookies, as they taste just like them! Dare I say… better ???????? I ate three in one go and struggled to stop ????

All you need is:
115g Unsalted butter, melted
150g Light brown sugar
115g Granulated sugar
1 Large egg
1 tsp Vanilla extract
160g Plain flour
20g Cocoa powder
1/2 tsp Bicarbonate of soda
1 tsp Salt
100g Milk/dark Chocolate chips
100g White chocolate chips
Bake 160C (fan) 8-10 mins
Makes about 20 cookies
Tip: When they cookies come out the oven, they will look puffy and underdone. Let them cool for 15 mins on the tray before moving them. They will flatten and crinkle like in the photo ????
The texture is just like Subway cookies!

EMPANADA DOUGH RECIPE- BEST FOR FRYING AND BAKING
Empanada dough for frying and baking is easy to prepare and you can make it by hand or using a bread machine. This flaky empanada dough can also be made with maseca or cornflour and feel free to add cream cheese in place of butter or totally replace the butter with oil or lard
EMPANADA DOUGH recipe- for frying and baking or air fryer
- FLOUR---- 5 cups (ALL PURPOSE FLOUR)
- SALT---- 1/4 TEASPOON
- SUGAR ---- 1 TABLESPOON
- EGG-------- 2 WHOLE EGGS
- MARGARINE(BUTTER) -----120ML MELTED OR 8TBSP ROOM TEMPERATURE
- WATER ----- ABOUT 100 ML OR MORE(UNTIL CONSISTENCY IS ACHIEVED)
TO MAKE THE EMPANADA DOUGH (FRIED MEATPIE DOUGH)
- Mix 5 cups flour, 1 tablespoon sugar and 1/4 teaspoon salt together until combined. Add 2 whole eggs and 120ml melted butter or margarine(8tbsp room temp) and mix well
- Gradually add water and continue mixing until the dough comes together and not sticky. Wrap in a cling film and rest in fridge for 20 minutes
- After 20 minutes, take out the dough knead a little and cut into two portions
- Roll out the dough on a floured surface and using a circular mold, cut out as much circles as the dough allows .Fill in the circles with the cooled filling and seal tight with your fingers and a fork
- finally heat up some oil on medium heat until pretty hot and fry the empanadas (meat pies) until golden brown and crisp

- SAL---- 1/4 DE CUCHARA
- AZÚCAR ---- 1 CUCHARADA
- HUEVO-------- 2 HUEVOS ENTEROS
- MARGARINA (MANTEQUILLA) -----120ML DERRITE U 8TBSP TEMPERATURA AMBIENTE
- AGUA ----- ALREDEDOR DE 100 ML O MÁS (HASTA LOGRAR LA CONSISTENCIA)
PARA HACER LA MASA DE EMPANADAS PAR A FREIR Y A HORNO

Mezcle 5 tazas de harina,
1 cucharada de azúcar
y 1/4 de cucharadita de sal
juntos hasta combinar
Agregar 2 huevos enteros y
120 ml de mantequilla derretida o
margarina (8 cucharadas a temperatura ambiente)
y mezclar bien
Poco a poco agregue agua y
continuar mezclando hasta que el

y no pegajoso
envolver en film transparente y
reposar en heladera por 20 minutos
permite que el gluten en el

sacar la masa
amasar un poco y
cortar en dos porciones
estirar la masa sobre

utilizando un molde circular,

y un tenedor
finalmente calentar un poco de aceite
a fuego medio hasta que esté bien caliente
y freír las empanadas (empanadas de carne)
