How To make Masa Biscuits
3 3/4 cups Unbleached all-purpose flour
1 1/2 cups Masa harina de maiz
2 tablespoons Plus 1 teaspoon baking
powder
1 teaspoon Salt
1 Stick (4 oz.) unsalted :
butter, well chilled
Cut into small pieces 1/2 cup Solid vegetable shortening well chilled
And cut into small pieces 2 cups Cultured buttermilk :
chilled
Position racks in the upper and middle thirds of the oven and preheat the oven to 450^F.
In a large bowl, stir together 3 1/2 cups of the flour, the masa, baking powde r, and salt. With a pastry cutter, blend in the butter and shortening until the mixture resembles a coarse and slightly lumpy meal. Stir in the buttermilk unti l a soft, crumbly dough is formed. Sprinkle the work surface with half of the remaining flour. Turn the dough out, gather it into a ball, and briefly knead i t, just until it holds together. Flatten the dough, sprinkle it with the rest of t he flour, and roll it out about 1-inch thick. With a round 3-inch cutter, form th e biscuits, transferring them to 2 ungreased baking sheets and spacing them about 2-inches apart. Gather the scraps into a ball, roll it out to 1-inch thick, and cut out the remaining biscuits.
Set the baking sheets on the racks and bake about 15 minutes, exchanging the position of the sheets on the racks from top to bottom and from front to back a t the halfway point, or until the biscuits are golden and crisp. Serve hot or war m. Makes 12.
Author's Comments: These jumbo, Texas-size biscuits include a generous measur e of masa harina de maiz, the specially treated ground corn that is the basis for tortillas, tamales, and other Southwestern staples. Because the masa contains no gluten, these biscuits are remarkably tender, with a distinctive but subtle flavor like that of a corn tortilla. They're particularl y good split, buttered, and topped with jalapeno jelly.

⏩Ingredientes para las galletas de mantequilla para navidad (44 galletas):
110 gr de Mantequilla sin sal.
2 Yemas de Huevo (33 gr).
80 gr de Azúcar glass (1/2 Taza -1 Cdta).
1 gr de Sal (1/4 cdta).
200 gr de Harina de trigo todo uso(1 1/2 Taza - 1 cdta).
10 gr de Maicena/Almidon de Maiz(1 Cda + 1cdta).
1/2 cdta de esencia de vainilla.
Tips y Recomendaciones:
1. También puedes cortar las galletas en cuadritos, círculos y hacer el diseño que mas te guste.
2. Puedes guardar la masa en tu refrigerador de un día para otro, pero, en ese caso saca del refrigerador tu masa unos 15 minutos antes de usar porque la masa estará bastante firme al sacar del refrigerador.

⏩Ingredients for Christmas butter cookies (44 cookies):
110 gr of unsalted butter.

Cup 80 gr of Sugar (1/2 Cup -1 tsp).
1 gr of Salt (1/4 tsp).

10 gr of Cornstarch / Corn Starch (1 Tbsp + 1cdta).
1/2 tsp of vanilla essence.

1. You can also cut the cookies into squares, circles and make the design that you like the most.

Ingredients:
????1/4 cup hot water
????1 tbsp coffee powder
????3/4 cup salted butter, melted
????3/4 cup icing sugar
????1 + 1/4 all purpose flour
????1 tbsp corn flour
????1/4 cup cocoa powder
Process-
1. In a bowl, add coffee powder and hot water. Keep this aside.
2. Take butter and sugar in a bowl and whisk this together until well combined.
3. Add in the espresso we made earlier and mix it in.
4. Now, add in the flour, cornflour and cocoa powder to form a sticky batter.
5. Let the batter refrigerate for 30 minutes.
6. Once chilled, the dough will become firm. Divide the dough into equal sizes using 1 teaspoon measurement and give them oval shape.
7. Place the cookie balls on your baking tray and make a gentle cut in the middle using the back of a butter knife.
8. Chill the cookies for 15-20 minutes.
9. Preheat the oven to 180 degrees celsius and bake the chilled cookies for 12-15 minutes.
