Maple Cream Recipe | MS Vegan Diet
Maple Cream (Maple Butter) is a great sweet treat that fits in with a vegan, whole foods plant based diet. I have a sweet tooth and to satisfy that craving I like to use maple cream. In this video I show you how easy it is to make. It also fits in with my MS vegan diet. It is lower on the glycemic index than many other sweeteners and it has a few nutritional benefits as well!

**Maple Cream Recipe**
32 oz. of grade A maple syrup.
¼ tsp Salt
Heat maple syrup and salt in a saucepan over medium heat until the temperature reaches 235 degrees F (110 degrees C). Stirring frequently so it does not boil over.
Remove from heat and pour into a stand mixer mixing bowl. Nestle the mixing bowl into a larger bowl with ice cubes in it and let the syrup cool to 100 degrees F (38 degrees C) without stirring.
Attach to a stand mixer (I use my Kitchenaid) with the paddle attachment and stir on low until the maple cream starts to crystallize. It will thicken, turn a pale tan color and start to lose its shine. Transfer into jars and refrigerate. It makes 4 small jars.
IMPORTANT NOTES:
Do not use grade B syrup, it might not work.
Do not walk away from the syrup when heating it. It is fickle and has an attitude. It WILL boil over the moment you walk away.
Patience is the name of the game with this recipe. The simmering will take time to get to 235. This temperature is very important to properly crystallize.
The stirring takes time too! Do not stop until it starts to lose its shine or it may not set up properly.
Yes, it is a finicky recipe but it is so worth it. If you don’t have a quality stand mixer (this will work its motor) you can stir constantly by hand but your arm will get wicked tired; I suggest the buddy system.

Garnish:
Gold leaf/Gold dust
Cocoa powder
Method:
1. Brew coffee and set aside, cool down for 2 min, place ice cubes and ice-cream into a glass, followed by your warm brewed coffee. Add maple syrup, Froth and steam milk and add too your latte. (Note) now this part is optional you don’t have to heat up the milk you can just add it cold like the traditional way.
2. Garnish with gold leaf and drizzle little bit of some more maple syrup, this stuff is absolutely delicious, you can add less or more, its a personal preference. Dust with cocoa powder and enjoy this delicious sweet latte.
Nutty Maple Pecan Latte Recipe
The Starbucks maple pecan latte arrived on the scene in September 2017, bringing with it a sweet and nutty flavor that's reminiscent of a good old pecan pie. While its pumpkin-spiced cousin is a solid choice for October, the maple-flavored coffee drink gives us all of the Thanksgiving vibes.
Even though this cup of coffee is part of the international coffee franchise's fall seasonal menu, you don't have to wait until the air becomes crisp and cool and the leaves fall to enjoy this drink. You can make it at home and savor the maple syrupy sweetness and rich pecan flavor all year long!
Here's what you'll need:
Shot of espresso
2 tablespoons maple syrup
1/2 cup of milk
1/4 cup of pecan butter
chopped pecan bits
Whipped cream
Saucepan
Now, there's nothing left to do except enjoy your delicious maple pecan latte! It's one of the most comforting drinks you can enjoy on a cold morning or afternoon, and with its rich espresso flavor, strong pecan taste, and sweet maple syrup, the caffeine and sugar-filled treat will warm you from the inside out.
