Malaysia Kitchen - Halibut in Coconut Sambal - Cooking Video
Ingredients:
5 Pods of fresh garlic, peeled
4 Fresh red jalapenos, roughly chopped
2 tsp. Salt or to taste
4 Tbs. Peanut oil
6 Tbs. Coconut cream
2 Tbs. Sugar
1 Tbs. Rice vinegar
2-3 Steaks of halibut
Parchment paper
Preparation:
1. Place garlic, chilies and salt in a food processor or blender and blend to a smooth paste. Add very little water if needed to keep the blade moving.
2. Heat oil in a skillet over medium heat, add chili mixture and allow it to cook for 5 minutes until the oil appears on the surface. Now add coconut cream, vinegar, fish sauce and sugar and continue to cook the chili mixture for another 5 minutes or more stirring occasionally until the oil appears on the top. This indicated the chili mixture (sambal) is now cooked. Turn of the heat and keep it aside.
3. Place each halibut on parchment paper, topped generously with the chili mixture and seal the sides into a pouch. Bake the fish at 350 F for approximately 30 minutes. Once the fish is done, cut the parchment paper open and serve the fish with rice.

'Spicy' Golden Pomfret with Coconut Milk / Cara masak Ikan Bawal Masak Lemak Cili Padi.
Ingredients to blend
1 onion
3-5 red chilies
2 shallots
5 bird's eye chilies
1 inch ginger
3-5 cloves garlic
2 candlenuts
1/2 cup of water
Other ingredients
1 whole pomfret fish, or any
2-3 cups of fresh coconut milk (depends how much your want)
150-200g bitter gourd / bitter melon, optional
1/2 tsp fennel
1 tsp fenugreek
1 lemongrass
1/2 cup of water
1-2 tamarind slice / asam keping
1 tsp shrimp powder / paste
cooking oil
salt
Method
Heat pan with oil. Add fennel and fenugreek. Stir for few seconds. Add lemongrass and blended ingredients. Sauté till oil separate. Pour water and cook again till oil separate. Add fish, coconut milk, bitter gourd, tamarind slice, shrimp paste and salt. Close with lid and cook till done. Flip the fish in between. Garnish with red chilies and coriander leaves.
