How To make Liver, Bacon and Onions.
2 lb Liver (beef)
2 c Flour
Salt to taste 1 ts Pepper
2 c Milk
1/2 lb Bacon
2 lg Onions
2 tb Canola oil
2 tb Corn flour
1 pn Basil
1 pn Thyme
Cut liver into desired thinkness. Soak liver in milk for a day in the refrigerator. Fry bacon and onions in the oil and set aside. Dredge liver through the flour,salt and pepper mix. Fry liver on a heavy skillet until slightly pink in the middle (medium). Remove liver and set aside. Mix cornflour and cold water and pour into skillet while off the heat and make gravy in the normal manner, adding basil plus thyme. Add liver, bacon and onions to the gravy and simmer for 15 minutes. Serve.

Liver and Bacon with Onion Gravy
This is a dish which my Nan would cook for me when I was young and I used to love it.
A lot of followers have asked to see me make this and although there are lots of variations to this recipe, this is how my Nan would make it for me and how I like it.
I am using Lamb's liver in this recipe, Calf's liver is just as good but a bit too expensive for my taste.
Give it a go and you might surprise yourself to find that you love it as much as I do.
