INGREDIENTS:
2 ¼ cups (333g) gluten free flour blend (I used all-purpose flour)
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup (170g) unsalted butter, softened
1 ½ cups (300g) granulated sugar
1 ½ teaspoons vanilla extract
¾ cup (168g) Greek yogurt room temperature
⅔ cup (226g) seedless jam (you choose the flavor!)

Jam Swiss Roll Recipe:
Sponge:
Maida (All Purpose Flour) - ¾ Cup (approx 100gms)
Baking Powder - 1 tsp
Salt - ¼ tsp
Egg - 4 nos
Sugar (powdered) - ¾ Cup
Vanilla Essence - 1 tsp
Oil - 2 tbsp
Red Food Colour - A Few Drops (Optional)
Icing Sugar - For Dusting
Filling:
Jam - 200 gms
Water - 2 tbsp
Strawberry (diced) - ½ Cup
Whipped Cream - 1 Cup
Cooking instructions:
1. Dice the strawberries and set them aside.
2. For the filling, whisk the jam and sugar until it’s smooth in consistency.
3. Whisk the whipping cream until soft peaks form and set it aside.
4. For the sponge, line a tray with parchment paper. Apply oil and dust with maida.
5. Preheat an oven to 180C.
6. For the batter, mix together the salt, maida and baking powder and set it aside.
7. In a separate bowl, whisk the eggs, vanilla and sugar until thick and foamy.
8. Incorporate the oil and finally the flour mixture.
9. Pour it into the lined mold and make a swirl pattern with food colour as needed and bake for 15 mins until firm and light golden in colour.
10. On a large clean cloth/ parchment paper dust liberally with icing sugar and tip over the cake onto it and dust with icing sugar in top as well. Gently roll it up into a log and allow it to cool.
11. Once it has cooled, roll out the cake and apply a thin layer of jam followed by a layer of whipped cream. Sprinkle the diced strawberries on the cream and roll it back gently into a log. Allow it to cool for an hour.
Cooking Tips:
1. The sponge should be firm to touch but delicate, a toothpick inserted into the sponge must come out clean.
2. Chopped Fruits of choice can be used.
3. Jam flavour of choice can be used.
4. Parchment paper is preferred over butter paper.
