How To make Lemon Strawberry Cake Roll
for filling: 4 egg yolks
1/2 cup sugar
1/2 stick unsalted butter
2 lemons -- juice of
1 teaspoon grated lemon rind
1 cup well-chilled heavy cream
1 pint small to medium strawberries
for cake: 4 large eggs -- separated
1/2 cup granulated sugar
2 teaspoons freshly grated lemon zest
1 teaspoon vanilla
1/4 teaspoon salt
1/4 cup all-purpose flour
1/4 cup cornstarch
confectioners' sugar for dusting for lemon syrup: 2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon water
lemon glaze: 1/2 cup confectioners' sugar
1 tablespoon fresh lemon juice
To make filling: In a heavy saucepan combine the egg yolks, sugar, butter and t he lemon juice. Cook the mixture over medium low heat, stirring until the butte r is melted and custard is thick enough to coat a spoon. Do not let the mixture boil. Transfer the custard to a bowl and stir in the lemon rind. Let the custa rd cool, cover with a buttered circle of waxed paper, and chill. In a chilled b owl whip the cream until it forms soft peaks. Cover and chill. Remove the straw berry hulls and either halve or quarter the berries, depending on their size. C over and chill.
Make cake: Preheat oven 350 degrees. Line the bottom of a greased jelly roll pa n, 15 1/2 by 10 1/2 by 1-inch, with foil. Grease the foil and dust with flour k nocking out excess. In a bowl with an electric mixer beat egg yolks, 1/4 cup gr anulated sugar, zest and vanilla until thick and
pale and mixture forms a ribbon when beaters are lifted. In a large bowl with c lean beaters beat egg whites until they hold soft peaks. Beat in the remaining sugar and gradually beat egg whites until they hold stiff peaks. Stir 1/3 of th e whites into the yolk mixture to lighten it and fold in remaining whites gentl y but thoroughly. Sift flour, salt and cornstarch over batter and fold until ba tter is just combined. Spread batter evenly in prepared pan and bake in middle rack of oven for 6 to 9 minutes or until cake is lightly colored and springs ba ck when pressed lightly. Dust a
kitchen towel generously with confectioners' sugar and invert cake onto it. Rem ove foil carefully from cake. Starting with the long side, roll up cake loosely but gently in the towel and cool 30 minutes.
Make lemon syrup: In a small saucepan combine 2 tablespoons granulated sugar, 1 tablespoon fresh lemon juice and 1 tablespoon water and bring to a simmer, sti rring until all the sugar is dissolved. Keep syrup warm.
Assemble cake: Stir half of the chilled whipped cream into the chilled lemon cu rd until mixture loosens up. Fold in remaining whipped cream. Unroll cake and c arefully brush with half the warm syrup. Spread cake with lemon curd filling. A rrange halved strawberries over the filling. Reroll the cake carefully. Transfe r cake to a platter seam side down, and brush with remaining syrup. Chill roll covered loosely for at least 2 hours or overnight.
Make lemon glaze: In a small bowl whisk together 1/2 cup confectioners' sugar a nd 1 tablespoon lemon juice to make a pourable glaze. Transfer glaze into a sma ll resealable plastic bag. Snip one corner to make a small hole. Trim ends of c ake diagonally and squeeze glaze decoratively over cake.

55g milk
55g oil

80g cake flour (or 70g all purpose flour and 10g corn starch)
a little pink fodd color

70g sugar

140g strawberry
20g sugar
1/2 tbsp lemon juice
*The whipped cream filling
250g heavy cream
20g condensed milk
20g powdered sugar (or you can use total 40g sugar and skip the condensed milk)

The lightest, most moist SWISS ROLL cake recipe I've ever had. Literally melts in your mouth!

This Swiss roll is probably one of my proudest recipes! It is so light and moist, and literally melts in your mouth. I filled my Swiss roll with homemade raspberry jam and whipped cream (both recipes provided) – a flavour combo that can’t go wrong!
INGREDIENTS:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
Swiss Roll
▢⅔ cups (80 g) all purpose flour
▢¼ cup (30 g) cornstarch - also known as cornflour in some countries
▢¼ tsp baking powder
▢¼ tsp salt
▢3 tbsp (45 g) milk - full fat, room temperature
▢3 tbsp (45 g) unflavoured vegetable oil - I use canola oil
▢6 large eggs - whites and yolks separated, room temperature
▢1 tbsp warm water - not boiling
▢⅓ cup (66 g) white granulated sugar (for the egg yolk mixture)
▢2 tsp vanilla essence/extract
▢½ cup (100 g) white granulated sugar (for egg whites)
▢1 tsp unflavoured vegetable oil - for lightly greasing the baking paper after the sponge is cooked.
Bake at 170 °C (340°F) with the fan on (convection mode) for 18-20 minutes, or until golden brown and the sponge slowly springs back when touched. If you don't have a fan function, increase the temp to 190°C (375°F).
Raspberry Jam
▢1 cup (110 g) frozen raspberries
▢¾ tbsp (6 g) cornstarch - also known as cornflour
▢1 tbsp (15 g) lemon juice - must be fresh
▢3 tbsp (38 g) white granulated sugar
Whipped Cream
▢1¾ cups (400 g) cold whipping cream - minimum fat percentage of 34%
▢2 tbsp icing sugar - also known as powdered or confectioners sugar
▢½ tsp vanilla essence/extract

Making a Cake Roll for Valentine’s! #shorts #baking
INGREDIENTS:
-6 large eggs, separated
-6 tbsp milk, room temperature
-4 tbsp vegetable oil
-1 tsp vanilla extract
-3/4 cup granulated sugar
-1 cup all purpose flour
-1 tsp baking powder
-pink food coloring
-a few drops strawberry extract (optional)
-4-5 cups Cream Cheese Frosting
HEART PATTERN-
-1 large egg
-2 tbsp granulated sugar
-1/3 cup flour
-1 tbsp vegetable oil
-red food coloring
HEART PATTERN-
Line a 9X13 baking pan with parchment paper.
Whisk together the ingredients for the heart pattern in a small bowl and transfer to a piping bag.
With the red batter, pipe small hearts onto the parchment paper until fully covered. Place into the freezer to chill.
Preheat the oven to 375F, then separate the egg whites from the egg yolks into two mixing bowls.
Whisk the milk, oil, vanilla, strawberry extract (if using), and pink food coloring into the bowl of egg yolks. Next, sift in the flour and baking powder. Whisk until combined and set aside.
Beat the egg whites on high speed until foamy, then slowly add in the sugar while continuing to whisk. Beat until stiff peaks have formed.
Gently fold the meringue into the egg yolk mixture, about 1 cup at a time. Be careful not to deflate the meringue while mixing.
Pour the batter on top of the chilled heart pattern and smooth to the edges of the pan.
Place into the oven and bake for 12-15 minutes.
Once baked, flip onto a floured surface, remove the parchment, and allow to cool for 5-10 minutes. Trim the edges of the cake if needed.
Spread a layer of cream cheese frosting evenly onto the cake. Carefully roll up the cake and tightly wrap in plastic wrap.
Place into the fridge to chill for at least 1 hour, then pipe extra frosting and add strawberries on top for decoration.

150g strawberries
100g raspberries
