How To make Strawberries 'N Cream Cake Roll
3 Egg yolks
1 ts Vanilla extract
5 Egg white
1/2 ts Cream of tartar
1/4 ts Salt
3/4 c Powdered sugar; sifted
1/2 c All-purpose flour
2 tb Powdered sugar
2 c Strawberries; sliced
2 tb Sugar
2 c Whipping cream
3 tb Sugar

Grease bottom and sides of a 15- x 10- x 1-inch jellyroll pan with vegetable oil; line with wax paper, and grease wax paper with oil. Set pan aside. Beat egg yolks in a large bowl at high speed of an electric mixer until thick and lemon colored; stir in vanilla, and set aside. Beat egg whites until foamy; add cream of tartar and salt, beating until stiff but not dry. Fold in 3/4 cup powdered sugar. Fold whites into yolk mixture. Gradually fold flour into egg mixture. Spread batter evenly into prepared pan. Bake at 350 degrees for 10 to 12 minutes. Sift 1 to 2 tablespoon powdered sugar in a 15- x 10-inch rectangle on a cloth towel. When cake is done, immediately loosen from sides of pan, and turn out onto sugared towel. Peel off wax paper. Starting at narrow end, roll up cake and towel together; let cool completely on a wire rack, seam side down. Combine sliced strawberries and 2 tablespoons sugar; set aside. Beat whipping cream until foamy; gradually add 3 tablespoons sugar, beating until soft peaks form. Unroll cake. Spread cake with sliced strawberries and half of whipped cream; reroll cake, without towel. Place on serving plate, seam side down; spread remaining whipped cream on all sides. Garnish with whole strawberries, if servings. -----

Strawberries and Cream Swiss Roll

Recipe (makes 1 roll)
Ingredients
3 eggs
1/2 cup sugar
1 cup flour
2 tsp baking powder
1 punnet chopped strawberries
Cream approx. 250ml (whipped)
Preheat oven to 180 degrees Celsius. Putt eggs and sugar in a large bowl and beat for 10 mins or until tripled in size and pale (as shown at 0.18). Sift the flour and baking powder in, half at a time. Fold in the first half then the second. Pour onto a lined tray (20cm x 30cm approx) and bake for 15 - 20mins or until risen and cooked. Prepare a piece of baking paper slightly larger than your roll and sprinkle with caster sugar, As soon as the roll comes out of the oven, roll from the short side up and keep in shape for 10mins. Unroll and spread/pipe cream on the cake. Put chopped strawberries on top. Chill in the fridge for at least 30 minutes, then serve!

TIPS:
- This recipe is for a 30x40 tray
- Use a kitchen towel to roll the Cake.
- Sprinkle icing sugar on top of the towel, add the hot cake on top, add more icing sugar and roll it.
- Let the swiss roll rest in the fridge before cutting it.

Strawberries and Cream Floral Roll Cake
INGREDIENTS
8 large eggs, divided, at room temperature
11 tablespoons caster sugar, divided
6 tablespoons milk, room temperature
6 tablespoons vegetable oil
1 teaspoon vanilla extract
1/2 cup all-purpose flour, sifted
6 tablespoons cornstarch
1 teaspoon cream of tartar
Zest of one lemon
Food coloring: red, green and blue
16 ounces whipped topping, thawed
14 to 16 strawberries, washed
INSTRUCTIONS
For the cake: Preheat oven to 350 degrees. Butter a roll cake sheet pan and line with parchment paper.
In a mixing bowl, whisk together yolks and 3 tablespoons sugar until the sugar is dissolved. Whisk in milk, vegetable oil and vanilla until smooth. Sift in flour and cornstarch and whisk until smooth.
In the bowl of a stand mixer, whip egg whites until frothy, then add cream of tartar. Whip at medium-low speed for 2 minutes, then gradually add remaining sugar. Whip on medium-high until stiff peaks form. Fold the egg white mixture into the egg yolk mixture.
Divide the batter into 4 portions, and tint one red, one green, and one blue. Leave one portion natural colored.
Pipe the blue flower centers, the red petals and then the green stems, then gently pipe the untinted batter over the entire surface. Tap the pan on the counter to avoid air bubbles and bake for 20 to 25 minutes until fluffy. Cake will spring back when touched. Remove parchment paper, and cool cake on a drying rack covered with a towel.
For assembly: Using a 1-inch flower cutter, cut all strawberries into a flower shape.
Place the chilled cake pattern side down on a sheet of parchment. Fill with a thin layer of whipped topping, and then place a stripe of strawberries across the cake. Pipe whipped topping over the top of the strawberries. Roll the cake over the strawberries and wrap in plastic wrap. Chill for about 1 hour or up to overnight. Slice and serve.

Today we're making a sponge cake roll with a creamy filling and strawberries
Ingrediens
sponge cake:
4 eggs
125g sugar
a pinch of salt
75g flour
50g cornstarch
1 tsp. baking powder
cream filling:
250g greek yoghurt (low fat)
200g heavy cream
70g sugar
10g vanilla sugar (or vanilla extract)
3 sheets of gelatin (appx. 2g per sheet)
500g strawberries (take 100g for the puree)
strawberry jam
