How To make Lebkuchen Or German Honey Cakes
1 c Honey
2 ts Cinnamon
1 c Brown sugar
1 ts Ground cloves
1 Egg
2 ts Allspice
1 tb Lemon juice
6 tb Finely chopped candied citro
3 c Flour
1/2 ts Baking soda
1 1/2 ts Nutmeg
Clear glaze: 1 c Powdered sugar plus 2 tb
-water Put the honey and the sugar in a mixing bowl, and beat until blended. Add the egg and beat very well. Stir in the lemon juice. Combine the flour, baking soda, nutmeg, cinnamon, cloves and allspice, and sift them together onto a piece of waxed paper. Add to the honey mixture and beat well. Stir in the citron. Cover the bowl, and refrigerate for at least 6 hours (The dough will be much easier to roll out if it is well chilled.) Preheat thje oven to 350 degrees, and grease some cookie sheets. Place 1/2 of the dough on a lightly floured surface (keep the other half chilled). Roll the dough into a large rectangle about 1/4" thick, sprinkling flour as necessary to keep it from sticking. With a sharp knife, cut the dough into rectangles about 1-1/2 x 2-1/2-inches. Place about 1" apart on the prepared cookie sheets. Roll out the other half while you are baking the first batch of cookies. Bake for about 10 to 12 minutes, or until the edges are slightly colored. Remove from the oven, and gently lift the cookies off the sheets, and onto wire racks to cool While the cookies are still warm, brush with a Basic Clear Glaze, if you wish. Store airtight for at least several days, so the cookies can mellow. Basic Clear Glaze: Brush glaze on cookies as soon as they come from the oven to give them a clear, shiny tp, and to add a little sweetness. The glaze will harden as it dries, and the cookies cool. Combine the sugar and water and mix well, to dissolve any lumps,and to make a smooth runny glaze. Brush or spoon on cookies while they are still warm. Helen Jolly. -----

German Christmas spices
Mixture of spices of German gingerbread
Ingredients
250g Flour
100g ground Hazelnuts
45g Cocoa powder
200g brown Sugar
3 Eggs
230g Butter
60ml date syrup or molasses
230ml Milk or Butter milk
10ml white Vinegar
10g Baking powder
15g Lebkuchen spices
Pinch of salt
With cups
2 cups Flour
1 cup ground Hazelnuts
3 tbsp Cocoa powder
1 cup brown Sugar
3 eggs
1 cup Butter
4 tsp date syrup or molasses
1 cup Milk or Butter milk
1 tbsp white Vinegar
1 tbsp Baking powder
1,5 tbsp Lebkuchen spices
Pinch of salt
The cake can be prepared with only flour, replace the cup of ground nuts with a half cup of flour.
The total amount of flour for the cake becomes 2.5 cups flour instead of 2 cups.
Preparation:
In a mixing bowl, add butter and sugar and mix well
add eggs and vinegar
add milk and molasses and continue mixing
Add ground hazelnuts and stir the mixture
Sift the dry ingredients and mix till get a homogeneous batterGrease the baking tray (25 cm to 28 cm diameter) with butter or lined with parchment paper
Bake the cake in a preheated oven at medium temperature 180 °C on a medium rack for 30 to 40 minutes or till golden
To decorate, 100 g of chocolate, as desired
After the cake cools, decorate as desired

German Lebkuchen - Holiday Baking | Cooking From Scratch
German Lebkuchen
• 1 cup heavy cream
• 1 Tbsp white vinegar
• 4 cups flour
• ½ cup almond flour
• 2 oranges zested
• 2 lemons zested
• 1 tsp cinnamon
• 1 tsp ground clove
• 1 tsp all spice
• 1 tsp baking soda
• ½ tsp nutmeg
• ½ tsp kosher salt
• 1 cup dark brown sugar
• ½ cup vegetable shortening – room temp
• ½ cup unsulfured molasses
• 1/3 cup blanched whole almonds
• 2 ½ cups powdered sugar
• 5 Tbsp whole milk
• Bake at 325 for 15 mins – leave on pan for 10 mins
Authentic German Lebkuchen, Iced And With Chocolate, Flourless Gingerbread
Recipe:
5.29oz (150g) hazelnuts
5.29oz (150g) almonds
3 eggs
3.52oz (100g) dark brown sugar
3.17oz (90g) candied orange peel
3.17oz (90g) candied lemon peel
3 tablespoons (42g) honey
3 tablespoons German gingerbread spice
1 teaspoon fresh lemon zest
14 Backoblaten (wafer paper), round 70mm
For the Glaze:
3.52oz (100g) icing sugar
3.52oz (100g) milk or dark chocolate
4 teaspoons of lemon juice
German gingerbread spice blend:
1.23oz (35g) ground cinnamon
9 cloves
0.07oz (2g) ground allspice
0.03oz (1g) ground cardamom
0.07oz (2g) ground coriander
0.07oz (2g) ground ginger
2 whole star anise
1-2 teaspoons ground dry orange zest (optional)
Place the ground and whole spices in a coffee grinder and grind until it’s a smooth powder. Your “German gingerbread spice blend” is
ready! Keep it in an airtight container away from direct sunlight or hot temperature.
