How To make Lebkuchen (German Honey Cakes)
1 c Honey
3/4 c Light brown sugar
1 ea Lemon; juice of
2 ea Eggs; beaten
2 1/2 c Flour; sifted
1 ts Baking soda
1/2 ts Nutmeg
1/2 ts Cloves
1 ts Cinnamon
1/4 c Almonds; shredded
1/4 c Citron; chopped
Combine honey, sugar, lemon juice and rind from the lemon. Beat in egg. Sift dry ingredients and add to egg mixture. Add citron and nuts and let stand one day (covered). Roll out dough 1/2 inch thick and cut into fancy shapes. Bake on buttered cookie sheet in 400 degree oven until browned.

Here's what we need:
2 Cups All -Purpose flour
200 ml -Clear honey
85 grams Softened butter
85 grams Ground Almond
2 -Tsp ground ginger
1-Tsp ground cinnamon
1-Tsp ground cardamom
1-Tsp baking powder
1/2-Tsp ground cloves
1-Tsp ground nutmeg
1/2- Tsp bicarbonate of soda
1/2 Tsp ground mace
For the Sugar glaze: (Optional )
100 grams Icing sugar
String
2- Tbsp water
For the Chocolate glaze:
200 grams Dark chocolate (Optional )

Lebkuchen is a german favorite enjoyed during the festive season. It goes well with a cup of tea or coffee. Please give this easy recipe a try.
Recipe makes about 20 pieces of Lebkuchen. Bake in 180 °C preheated Oven for 20-25 minutes.
Ingredients
Blended Haselnuts - 130g
Blended Almonds - 130g
Brown Sugar - 120g
Honey - 1 tbsp
Eggs - 4
Salt - Pinch
Candied Lemon - 100g
Candied Orange - 100g
Baking Wafers - 20 pieces 70mm wafers
Spices
Kardamom powder - Pinch
Clove Powder - 1/2 tsp
Cinnamon Powder- 1/2 tsp
Koriander Powder - 1/2 tsp
Nutmeg Powder- 1/2 tsp
Ginger Powder - 1/2 tsp
Anis Powder - 1/4 tsp
Mace - 1/4 tsp
Coating
Dark chocolate- 80g
Butter - 40g
Powdered Sugar - 70g
Lemon Juice- 3 tbsp

LEBKUCHEN OR GERMAN HONEY BARS
German Honey Bars will keep 6 months in a tightly closed tin, especially if, as our grandmother’s used to say with a twinkle, “locked up”.
Heat slightly in a large saucepan:
1 1/3 cups honey or molasses
¾ cup sugar
Add and melt:
3 tablespoon butter
Sift together and add:
About 2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
Add:1/2 cup bleached almonds
¼ cup chopped orange or lemon peel
¼ teaspoon ginger
2 teaspoon cinnamon
1/8 teaspoon cloves
Bake about 25 minutes in a preheated 350 F (150 C ) oven.
German Lebkuchen - Holiday Baking | Cooking From Scratch
German Lebkuchen
• 1 cup heavy cream
• 1 Tbsp white vinegar
• 4 cups flour
• ½ cup almond flour
• 2 oranges zested
• 2 lemons zested
• 1 tsp cinnamon
• 1 tsp ground clove
• 1 tsp all spice
• 1 tsp baking soda
• ½ tsp nutmeg
• ½ tsp kosher salt
• 1 cup dark brown sugar
• ½ cup vegetable shortening – room temp
• ½ cup unsulfured molasses
• 1/3 cup blanched whole almonds
• 2 ½ cups powdered sugar
• 5 Tbsp whole milk
• Bake at 325 for 15 mins – leave on pan for 10 mins
