Grilled Skirt Steak and Onion With Yellow Rice and Black Beans
Nothing beats the taste of a grilled skirt steak. In this recipe we combine a Brazilian churrasco influence along with a Mexican jalapeño steak influence to create an unforgettable skirt steak. And to complete the meal, we are cooking up a delicious grilled onion along with yellow rice and black beans.
Ingredients
1.25 pounds or more of skirt steak
1 white onion
1 can seasoned black beans or black bean soup
1 small package of yellow rice
1 teaspoon everglades seasoning
1 teaspoon ground jalapeño
1 teaspoon BBQ salt
1 teaspoon lawry’s seasoned salt
1/8 teaspoon olive oil
2 tablespoons butter
First, season the skirt steak with the coarse BBQ salt by spreading it around the steak and lightly patting it down into the meat. Do not push too hard, you want some of the salt to fall off during the cooking process. Next, generously season the steak with the ground jalapeño. We say generously, but you may want to dial it back if heat is not your thing. Finally season the steak with everglades seasoning. Next, peel a white onion and slice into 4 thick slices. Break up the rings of the onion and place this on a sheet of foil large enough to wrap and contain the onions. Next season the onion slices with Lawry’s seasoned salt. Next cut 2 tablespoons of butter into small pieces and add to the onions. Wrap the onions up in the foil by creating a ball of onion in foil. If needed, add a 2nd piece of foil to wrap the onions. Preheat your grill on low heat and after 5 minutes, place the onions on the grill. Allow the onions to cook for 10 minutes before adding the steak. Next, empty the can of black beans into a small pot and heat on the stove top on medium low for about 5 minutes. After 5 minutes, reduce the heat to low. Next, start the yellow rice on the stovetop following the directions on the package. Usually this would be to bring 2 cups of water and 1 teaspoon olive oil to a boil, then add the contents of rice packet. Stir the rice, and after 1 minute, reduce the heat on the rice to low. Once the rice and beans are cooking, it’s time to get back to the steak. Allow the onions to cook for 10 minutes, then add the steak to the grill. Place it on the direct heat on low. Allow to cook 5 to 7 minutes, then flip the steak once. While waiting on the steak, check up on your rice and beans stirring them up. Allow the steak to cook another 5 -7 minutes and then steaks will be done! Remove the steaks and onions from the grill. Use caution when opening the onion foil packet, it will be hot and it can burn you! When the rice is finished cooking (usually 25 minutes) spoon out half of the rice onto a place and cover with half of the black beans. Add the steak and onions to the plate. Eat and enjoy!!

Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.

Award Winning Chili Recipe Ingredients
5 slices thick sliced, hardwood hickory smoked bacon
1 red bell pepper, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
1 small yellow onion, diced
½ - 1 jalapeno pepper, seeded and diced
1 10.5 oz can beef consomme (you can also use beef stock)
1 6 oz can tomato paste
1 tablespoon Worcestershire sauce
2 15 oz. cans diced tomatoes, undrained
1 15 oz. can pinto beans in mild or medium sauce (also called Chili Beans)
1 15 oz. can kidney beans in mild chili sauce
2 pounds ground beef
Crockpot Chili Ingredients - Spices
4 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon white sugar
2 teaspoons cumin
1 teaspoon smoked paprika
3 teaspoons garlic powder
1 teaspoon basil
1 teaspoon Lawry’s seasoned salt
½ teaspoon ground pepper
½ teaspoon cayenne pepper
Award Winning Chili Recipe Directions
Prepare the vegetables for the recipe first. Roughly chop the red and green peppers and celery. Seed the jalapeno pepper(s), removing the seeds and membrane, then finely dice. Use more jalapeno for a spicier chili. Peel and dice one small yellow onion.
Cook the bacon in a large cast iron skillet, until the bacon is lightly crisp but not overdone. Remove the bacon and drain on a paper towel lined plate.
Saute the vegetables in the bacon grease for about 5 minutes, until tender. Remove the vegetables from the skillet, draining as much bacon grease from the vegetables as you can. Cook the ground beef in the skillet with the bacon grease. Cook the beef one pound at a time so the meat has enough room to brown and not steam. Break the ground beef into pieces about 1 - 2 inches. When cooked through, remove from the skillet and repeat with remaining meat.
Measure all of the spices into a small bowl, and mix together.
Now it’s time to assemble all of the ingredients into the slow cooker. Mix the beef consomme or beef stock in the crockpot with the tomato paste. Add the Worcestershire sauce and spice mixture, and stir to blend. Taste the mixture and adjust spices as you like. Add the cans of tomatoes and beans, all undrained. Add the beef and sauteed vegetables. Chop or cut the bacon into about ½ inch pieces and add to the crockpot chili mixture. Cover and cook on low for about six hours. I love that this is a crockpot chili recipe! It’s so easy to put together in the morning and have delicious chili ready for dinner!
