This is an easy way to cook lamb and once you try it you will be making it again!
Lamb Stew Recipe
Ingredients:
2 - 3 lbs of lamb stew meat, cut into 1 inch chunks
½ yellow onion, diced
4 cloves of garlic, minced
⅓ cup of red wine
2 ½ cups chicken broth
1 ½ tsp. Ground coriander
1 ½ tsp. Dried thyme
1 ½ tsp. Paprika
1 tsp. Salt
2 tsp. Tomato paste
1 cup fresh tomatoes, chopped
2 bay leaves
1 Tbsp. date paste, or 2 tsp. Coconut sugar, optional
3 gold potatoes, organic, rinsed and cut into 1 inch chunks
4 carrots, organic, rinsed, peeled and sliced into coins
Olive oil
Directions:
Instant pot directions: Add 2 tsp. Olive oil to the instant pot and set it to saute for 5 minutes. Add the onion and stir frequently. After 5 minutes add the lamb cubes and saute for an additional 5 minutes.
Next add the garlic, tomatoes, red wine, tomato paste, date paste, bay leaves, coriander, thyme, paprika, salt, and chicken broth. Stir to combine.
Place the lid on the instant pot and the pressure valve to seal and pressure or stew/soup setting depending on your unit. Cook on high pressure for 20 minutes.
Release the pressure and when it’s completely released, open the lid carefully. Add the potatoes and carrots and cook for an additional 5 minutes on high pressure just as before.
Serve this with my garlic bread recipe for the perfect dinner!
Cooking notes: If you want to make the sauce a little thicker, add 1 Tbsp. or more, of arrowroot to the stew when you add the potatoes. Mix 1 Tbsp. of arrowroot to 1 Tbsp. of chicken broth and stir before adding. Stir it in.
If you don’t have an instant pot, you can still make this in a regular stock pot or a slow cooker. In a regular stock pot, just brown the onion and meat as we did in the instant pot and then put all the ingredients in except the potatoes and carrots. In a stock pot the potatoes and carrots will take about 40 minutes to cook so add them the last 40 minutes of cooking. I would simmer the stew for about 2 to 2 ½ hours total.
Slow cooker: Saute the onion and lamb in a frying pan over medium high heat with a little oil before adding to the slow cooker. This step adds so much flavor. Add enough chicken broth to cover all the ingredients including the potatoes and carrots. Cook on low for 7 - 8 hours or high for 3 to 4 hours.

Greek Style Lamb & Potato Stew in the Instant Pot

Ingredients
4.5-5 pounds (about 2 kilos) lamb pieces
1 onion, finely chopped
4-5 garlic cloves, grated
2 -3 carrots, peeled and diced
28 oz (794g) crushed tomatoes
salt, to taste
freshly cracked black pepper, to taste
1/4 teaspoon crushed red pepper flakes
1 teaspoon dried thyme
1 sprig rosemary
2 bay leaves
1 heaping teaspoon sweet paprika
1 and 1/2 pounds potatoes, peeled and cubed
1 teaspoon dried oregano
For serving: finely chopped parsley, olives, feta, bread
Instructions
Place all of the ingredients except for the oregano in side of the instant pot and mix together. Add a cup of water or chicken broth.
Set the Instant Pot to High Pressure for 25 minutes. Make sure the vent is in the sealed position.
Allow the pressure to naturally release for about 15 mintes and then open the valve to release the remaining pressure.
Open the lid and taste the stew. Adjust the seasoning of needed. Remove the bay leaves and rosemary stem.
Add the teaspoon of oregano and garnish with fresh parsley.
Serve with toasted bread and a salad.

Notes
Leg of lamb with the bone in is great for this recipe however boneless lamb works too. Use whatever you have. Beef is a good substitute.
Store leftovers in the refrigerator or freeze for up to 2 months.

How To Make Lamb Stew | Guinness Irish Lamb Stew
If you're looking for a delicious bowl of a heartwarming Irish Stew, look no further. This stick-to-your ribs lamb stew is a winner in my home year-round. Fun fact about me - I'm a dual citizen of Ireland with my parents being from both the North and South of Ireland with relatives all over the country. When we had our first family trip to Ireland, the first place we visited was the Guinness Factory and what an amazing treat that was!! Opened in 1759, the Guinness Factor was a 1/2 day experience for us. We watched how they made the beer, taste tested various drafts, learned the history, and ate the Guinness Stew they served in the cafeteria. Can I just tell you HOW AMAZING it tasted? I had never had a stew that delicious in my life and it was at that moment that I told myself that I needed to perfect a Guinness Irish Stew for my family - and so I did!
