Jello Sugar Cookies

JELLO SUGAR COOKIES
3 1/4 Cups Flour
1 Cup Sugar
1 1/2 Cups Butter
1 Egg
1 Tsp Vanilla
1 Tsp Baking Powder
1/2 Tsp Baking Soda
12 oz Jello Mix (Assorted)
Food Coloring

Preheat oven to 350 and combine sugar and butter in a large bowl until fluffy. Add egg and vanilla. In a different bowl combine flour, baking soda and baking powder. Add to wet ingredients, combine and divide into four. Add 2 tbsp of jello to each section, along with food coloring. Roll into balls, flatten on a baking sheet and sprinkle with more jello. Bake for 8 - 10 minutes. Enjoy!

3 1/2 cups flour
1 tsp baking powder
1 1/2 cups butter softened
1 cup white granulated sugar
1 egg
1 tsp vanilla
2 tbsp of jello powder for each colour you want to make.

Cream sugar and butter together until light and fluffy.
Add vanilla and egg and blend until creamy and well combined.
Add in the baking powder and stir.
Blend in the flour a little at a time until incorporated. You may have to blend in the last bits of flour by hand depending on your mixer.
Remove the dough from the bowl and knead enough to form a ball.
Divide dough into number of colours you want to make.
For each colour, add in 2 tbsp of jello powder and knead until combined.
Add in food colouring to intensify the colour if desired.

At this point you have a couple of choices.
You can roll portions of dough into a ball and then roll them in additional jello powder, place them on a cookie sheet and press down lightly to flatten.

OR if you want to make the rainbow flower shape I made in the video, do the following:

Roll out the dough portions into a log shape about 12 long. (If you want smaller cookies. Divide the dough portion into two first before rolling logs, the logs will be smaller).
Press the log shapes together, brushing the edges that touch one another with milk or water. Wrap in plastic wrap and refrigerate until firm (3-4 hours).
Using a sharp knife, slice off 1/4 inch rounds of dough and place them about 2 inches apart on a greased cookie sheet.

Bake at 350F for 15 minutes until set and edges are just lightly browned.
Allow to cool on cookie sheets for a few minutes and transfer to wire racks to cool completely.
Store at room temperature in a covered container.
Makes about 2 dozen cookies (depending on size).

♥ I N G R E D I E N T S :
1 bag Sugar Cookie Mix
A Pinch of Salt
2 eggs
1 stick of Butter (softened)
1 cup Cake Flour
A dash of Vanilla Extract (optional)

MIX ALL INGREDIENTS.

Then add :
1/2 cup flavored gelatin powder (Jell-O)

****IF YOU SPLIT YOUR DOUGH IN HALF, USE 1/4 CUP JELL-O***

Use food coloring for an extra pop of color.

Roll your dough into small balls & refrigerate for about 10 minutes.

Flatten each ball & use a cookie cutter. Don't make them too thick - about 1/4 is good. Use sugar to keep the dough from sticking to your surface.

Bake for 10 minutes at 375 degrees F on the top rack.
(*Note* I'm using an electric oven & it takes longer to bake than gas ovens I've used in the past… adjust your time & temperature accordingly.)

Ingredients:
1 lemon
1 cup granulated sugar
1/2 cup water


Thinly slice the lemon and put them into the boiling water and simmer for 10 minutes. Remove the slices, put sugar and water to the pan. Add lemon slices when it is bubbly and cook them for 20-30 minutes in low heat. Let them cool on parchment paper.
