Marions Christmas Cookie
My family and I have been making Marian's cookies every Christmas for the past 50 years. It's a tradition, it's delicious and it's so easy to make. Why don't you thrill your family today with this glorious holiday recipe. This is all you need:
2 sticks of butter softened
1 cup brown sugar
1 egg yolk
1 tsp vanilla
2 cups flour (you may substitute gluten-free flour if needed)
In a stand mixer, cream together the butter, sugar, egg and vanilla. Once creamed add the flour a spoonful at a time forming a nice toffee cookie.
Turn the dough out onto a piece of parchment paper, cover with another piece of parchment paper and roll it into a rectangular shape or something close to it. Lift the bottom piece of parchment paper into a cookie sheet and with your fingertips moistened, form a sheet of cookie end to end, top to bottom. If you're going to use nuts in this recipe, which I do recommend, now is a good time to press that into the unbaked dough and bake it in the 350° oven for 25 minutes. It's going to look uncooked when it comes out but you must believe me, it cooked.
Once removed from the oven, cover with a whole bunch of chocolate chips or unwrapped Hershey bars and let the chocolate melt due to the heat of the cookie. It'll take five minutes or so. When the chocolate is shiny, it's fully melted so just use the back of a spoon to spread it out and make it pretty.
After it rests for about 20 to 30 minutes, cut it into bite-size pieces but leave it there until it is fully cooled. Then, simply enjoy some of the best cookies you'll ever make. Bon appétit everyone. Be sure to like and subscribe and share my recipes with all your friends.
