How To make Jalapeno Casserole
1 cn 7 oz green chiles, drained
3 c Shredded Monterey Jack
Cheese and/or cheddar cheese 2 md Tomatoes, peeled & sliced
4 lg Eggs
1 1/2 c Evaporated milk
1/4 c Flour
1 ts Salt
Sliced avocado and sour Cream for garnish 1. Preheat oven to 350F. Lightly butter an 11x7 glass baking pan.
2. Arrange the chilies on the bottom of the casserole. Top with an even
layer of the cheese and then the sliced tomatoes. 3. In a large bowl, whisk the eggs until they are frothy. Gradually whisk
in the evaporated milk, flour and salt. Carefully pour over the layers in the dish. Bake 50-60 minutes, or until lightly browned. Serve in squares and garnish with sour cream and avocado slices. Source: "Cooking with Regis and Kathie Lee", 1993

Jalapeno fans will love this Jalapeno Popper Chicken Casserole. It’s super creamy and in addition to bacon and chicken it also has pasta and plenty of cheese, both Cheddar and Monterey Jack.

Cheesy Jalapeno Corn Casserole

Ingredients:
8oz. sour cream
1 stick butter, melted
1 can creamed corn
1 can whole kernel corn
1 box Jiffy mix
Optional ingredients I used:
1/2 large onion, diced and sauteed in 2 Tbs. butter
8 oz. sharp cheddar cheese, grated
2 Tbs. pickled jalapenos, diced
1 tsp. pepper
1 tsp. red pepper flakes
1/2 tsp. garlic powder
Preheat oven to 350 degrees.
In a large bowl, combine half of the cheese and all additional ingredients and mix well.
Pour into a square, greased baking dish. Garnish with remaining cheese, a few extra jalapenos and a sprinkle of pepper flakes.
Cook for 50-60 minutes until top is golden brown.
