How To make It's a Snap!
2 Egg whites; room temp
1/8 ts Cream of tartar
1/2 c Sugar
1 ts Vanilla
1/2 ts Ginger
1/2 ts Cinnamon
2 Gingersnap cookies; crushed
Preheat oven to 250 F . Grease cookie sheets. Beat egg whites in mixer bowl at medium speed until frothy. Add cream of tartar, beat until soft peaks form. Add sugar, 2 tablesspoons at a time, beating 30 seconds after each addition. At high speed, beat until stiff, 1 minutes more. Beat in vanilla, ginger and cinnamon. GENTLY fold in cookie crumbs. Drop by teaspoonsful onto prepared cookie sheet. Bake 45 minutes until dry to the touch. Turn off oven, let meringues cool in oven, 2 hours.Makes 20 cookies. -----

Recipe:
INGREDIENTS:
1/2 cup cut sugar snap peas
1/4 cup sliced carrots
1/4 cup chopped green onions
1/4 cup chopped cilantro
1/4 cup bean sprouts
1/4 cup crushed peanuts
1/8 cup Thai basil leaves
Fried thin rice noodles as per preference
For Dressing:
1 tablespoon Thai curry paste
2 tablespoons coconut milk
1 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon sesame oil
2 tablespoons sugar
PREPARATION:
1. In a bowl Add all the ingredients for dressing. Mix & keep it aside.
2. Deep fry thin rice noodles.
3.In a Salad bowl, add snap peas, carrots, green onions, cilantro, bean sprouts, crushed peanuts and mix.
4. In a serving bowl, add salad mix, dressing, Thai basil leaves, pinch of crushed peanuts & top with fried thin rice noodles. Enjoy!
