How To make Individual Fruit Tarts
Short pastry - rolled out - to about 1/8-in thickness 12 tb Granulated sugar
2 tb Granulated sugar
-to sprinkle on - rolled pastry Apricot jam; warmed Fresh fruit -such as -Golden Delicious apples, - Pears and so forth Butter 1/2 Lemon, juice only
PREHEAT OVEN TO 425F. Roll out the pastry and cut circles about 5-inches across using a cookie or biscuit cutter. Gather into a ball the dough remaining from the cutouts, roll again and cut additional circles. Sprinkle with about 2 tablespoons of sugar, stack with waxed paper between and refrigerate, or better, freeze. Prepare the fruit by peeling, coring, slicing thinly and tossing with lemon juice. Warm the jam using 1 tablespoon or 2 of water if needed. Taking a disk of dough, turn the edges up as though making a small pizza. Spread a little apricot jam over the pastry. Put a few slices of overlapping fruit on, paint with more apricot jam, sprinkle with a tablespoon of sugar and dot with butter. Bake for 15 minutes. The pastry edges should be golden brown.

Tart rings:
▶️Ingredient: for 5-6 mini tarts
Custard filling:
3 egg yolks
65g sugar
salt
235g milk
8g butter
5g vanilla extract
16g cornstarch
Crust:
salt
114g unsalted butter
80g powdered sugar
2g vanilla extract
3 egg yolks
225g flour
Decoration: top with any fruits you like
Some apricot syrup (apricot jam+hot water 1:1)
▶️Ingredient: for 5-6 mini tarts

▶️Tips for baking perfect tart shells:
-cool the dough in the fridge before cut and shape it
-the dough will be melted easily if the weather is hot (summer time), so I recommend roll the dough into 2 sheets, take out one at a time.
-you can use any kind of tart ring that you prefer (cupcake pan is fine too), but in order to have beautiful shapes tart shells, I recommend using these tart rings I have never had any troubles using these.

Recipe for Tart Shells
1 3/4 Cups (175g) All Purpose Flour
Pinch of Salt
1/2 Cup of Sugar (96g)
1 Tsp Baking Powder
1 Large Egg
1 Large Egg Yolk
1/2 Cup + 1 tbsp Unsalted Butter (129g)
Bake at 350F (177c)
Blind Bake Dough (this ensures the crust is baked evenly and will prevent a soggy crust)
Cut out a Circle of Parchment paper
Add Dried Beans and Bake
for 12 to 15min
Remove from oven and take out parchment circle and beans place back into oven for another 3 to 5min
Let the Tarts cool completely before filling

Fresh Fruit
Apple Jelly for a Shiny Glaze
1 to 2 Tbsp of Apple Jelly
1 to 2 Tsp of Water
Heat in Microwave
Notes:
*The dough will be crumbly at first but will come together once set and placed in refrigerator.
*Wrap dough in plastic wrap and place in refrigerator for 30min or overnight
*Make sure dough is cold or chilled at all times when preparing tarts otherwise it will become to sticky
*Tart Pan purchased From Amazon
6 - Well Mini Fluted Tart Pan
Dimensions 15.75 x 11.25 x 1.25 inches
Size bowl I used in video 5.5inch
