How To make Individual Party Pizzas
8 oz Fresh Italian sausage
1 T Olive oil
1 md Onion, chopped
1 Garlic clove, minced
1 cn Plum or whole tomatoes,
-broken up (16 oz) 1 t Dried basil leaves, crushed
1 t Dried oregano leaves,
-crushed 1/2 t Salt
1/2 t Dried rosemary leaves,
-crushed 4 oz Pepperoni, thinly sliced
1 sm Green or red bell pepper,
-cut into 1/2" pieces 1 sm Onion, coarsely chopped
1/4 lb Fresh mushrooms, sliced
1 cn Sliced ripe olives, drained
1 cn Marinated, quartered
-artichoke hearts, drained -and halved (6 oz) Crushed dried red pepper 3 c Shredded mozzarella cheese
1/4 c Grated Parmesan cheese
PIZZA CRUST DOUGH:
3 c Flour, divided
1 pk Fast-rising dry yeast
1 t Sugar
1/2 t Salt
1 c Warm water (105'F.-115'F.)
2 T Olive oil
Cornmeal Prepare Pizza Crust Dough. Remove and discard casing from sausage. Heat small skillet over medium heat until hot. Crumble sausage into skillet. Cook, stirring to separate meat, until no pink remains. Pour off drippings; set aside. Heat oil in medium skillet over medium-high heat. Add medium onion and garlic; cook and stir until onion is soft. Add tomatoes, basil, oregano, salt and rosemary. Reduce heat to low; simmer, uncovered, 30 minutes, stirring occasionally. Cool. Preheat oven to 425'F. Spread an equal amount of sauce over each prebaked crust. Divide sausage and 1/2 of pepperoni over crusts. Place green pepper, small onion, mushrooms, olives, artichoke hearts and crushed red pepper evenly over crusts as desired. Top with remaining pepperoni and cheeses. Place pizzas on baking sheets; bake 12-14 minutes or until heated through. PIZZA CRUST DOUGH: Combine 2 1/2 cups flour, yeast, sugar and salt in large bowl. Add water and oil; beat with electric mixer at low speed 1 minute. Beat at high speed 3 minutes. Stir in enough of remaining 1/2 cup flour to form soft dough. Turn out onto lightly floured surface. Knead 8-10 minutes or until dough is elastic. Place in lightly greased bowl; turn to coat. Cover; let rise in warm place until double in bulk, about 45 minutes. Punch down dough; divide into six pieces. Cover; let rest 10 minutes. Roll each piece of dough into a 7" circle; prick several times with fork. Cover; let rest 10 minutes. Preheat oven to 425'F. Generously grease two baking sheets; sprinkle with cornmeal. Place pizzas on baking sheet; bake 8-9 minutes or until golden brown. Cool on wire racks. Makes 6 7" crusts. Step #1 - How to Prep for Pizza Party with a Home Pizza Oven
In this video i show you how i prepare for a pizza party at home. this is just step one because the video was going to be 30 min so i broke it into 2 parts, Stept 1 is the prep and Step 2 is the day off and making the pizzas. This is meant for people needing help planning and prepping for a pizza party using a home pizza oven.

48 Hour - 70% Hydration BIGA Dough Recipe for Neapolitan Pizza
Step 1 = Making the Biga Starter / Makes 8 Neapolitan Pizzas
Ingredients: (30% of total final Dough)
200g - Water (room temp or slightly warm)
400g - Type OO Flour (Bread Flour will also work but i have found it doesn’t clump up as nicely)
5g to 10g - Instant Dry Yeast (If using fresh yeast, double the amount) - In the summertime I only use 5 g of instant dry yeast
Instructions: Making the BIGA
1. Place water into a bowl or container that you can cover to make air tight later in process.
2. Mix in the yeast and stir around for a few seconds or until dissolved
3. Mix in the flour little by little mixing by hand for a couple of minutes then cover (air tight lid or plastic wrap)
4. Rest at room temp. for 1 hour
5. Rest in fridge (48 hours)
Step 2 = Remove Biga from Fridge to Make the Final Dough (They’ll be ready to cook in five hours) So if you want pizza at 5 PM start at 12:00pm / noon
Ingredients:
800g - Water (Room Temperature) - should be just about 3 1/2 cups
1 Kilo / 1000g / 2.2 lbs or 1 standard Bag - Type OO Flour
30g - Sea Salt
Instructions:
1. Pour the 800g of water into your stand mixer bowl (Kitchen Aid)
2. Add the BIGA to the same mixing bowl (Break it apart with your hands and put it in the water)
3. Turn mixer on low and mix until the water appears milky (BIGA will still be in chunks)
4. Slowly Add 1/2 of the of the flour
5. Sprinkle in all of the sea salt
6. Slowly add the remaining 1/2 of flour
7. Mix on medium speed for 15 - 20 minutes (Dough will be sticky)
8. Remove dough from bowl with a spatula and place on a dry work surface to “strengthen” the dough with your hands by picking it up with both hands (one on each side of dough- you might want to sprinkle a little flower on it (as needed) or put olive oil on your hands to prevent sticking) pulling it up into the air chest high then folding it back on it’s self (about 10 times - until dough is smooth)
9. Then gently roll the dough into one large ball keeping the top side of the dough up and place same mixing bowl upside down over dough and let it rest for 30 min
10. Uncover the dough and “strengthen” the dough again with your hands by picking it up with both hands (one on each side of dough) pulling it up into the air chest high then folding it back on it’s self (about 10 times - until dough is smooth)
11. Let the dough rest again for 10 Minutes (Covering it again with the same mixing bowl from before)
12. Make the dough balls by cutting the dough in half, then cut each piece in half again until you have 4 equal pieces of dough (makes 4 dough balls around 280grams- you might have an extra little one) anything larger than 280g may not fit inside a smaller pizza oven such as a roccbox or ooni koda, etc. (280g will push the limits of a 12” peel also and your dough will hang over the edges)
13. lightly flour your hands and roll the 4 pieces into balls keeping the original top side of the dough up for each ball
14. Place the dough balls on a floured sheet pan or in a dough box spacing them out evenly, lightly flour the tops to prevent the plastic wrap covering from sticking.
15. Cover with plastic wrap or place in covered dough box and let dough balls rest for 2 hours at room temperature and then dough it's ready to use. (If you are cooking later you can put them directly into the fridge and then remove them 2-3 hours before you need them)
16. You can also ball the dough and then place covered back in the fridge (before they rise) for up to 1 more day if needed
17. Open a bottle of Chianti or cold beer and then make pizza!

You know, as a chef, whenever I have a dinner party, the pressure is always on me. But the cool part about throwing a pizza party is that it's kind of on everyone to make an awesome pizza. Here's how I would set it up.
First and foremost, I would make my dough, rise it, and make them into little individual portions, and just keep the board well-floured, and even maybe a towel over the top of these so they don't crust over.
I would always have the sauce, the olive oil, very close to the beginning, so people can kind of roll their dough out over here, add a little bit of olive oil or sauce if they'd like. And then they kind of move on to the toppings stage. We have lots of different types of vegetables. Keep in mind that when you are serving your vegetables... let's say you have something like onions. You want to make sure that you caramelize these before the party, right? Don't just put raw onions out and expect them to figure that out. And anything that's going to take a long time to cook, maybe a little sausage to render, some beautiful eggplant, some roasted mushrooms, if they're going to take some time to cook, do it beforehand. Get them in a nice little bowl, maybe a little swig of olive oil just to keep them moist. And put them out for everyone to kind of dive into.
We have all of our meat section here. A little bit of beautiful anchovies. Dry spices for them to finish up with. And then you have different types of fun veggies, chili flakes, herbs. The idea is that you're kind of setting the tone, setting a kind of building block for everyone to take a blank canvas and move throughout. And then, make sure to have plenty of pizza peels ready. Your ovens are on full whack with a couple of pizza stones in, or some upside down pans, and you're using the base of it, and people will put them in one at a time.
But the key to a great pizza party is retaining the heat in the oven. Everyone's going to be shoveling in their pizzas, taking it out, and the idea is that you want to do it as fast as possible. If you are going to open up the oven, make a quick, quick open. Grab the pizza, and out, and on the board, and then let it reheat for the next one.
Have fun, and throw a pizza party. It's that easy.

Pre bake the crust for 3 mints at 220° c
Then bake 8 to 10 mints depending on your crust preferences. You can adjust the temperature accordingly to your oven
Ingredients for instant pizza sauce ..
Ketchup 1/2 cup
Oregano 1/2 tsp
Basil / mix hurbs 1/2 tsp
Chilli flakes 1tsp
Salt 1/2 tsp
Paprika 1tsp
Chilli garlic sauce 1tsp or its optional.
Mix all ingredients and ur instant pizza sauce is ready
Ingredients for topping
Shredded chicken 2 cup
Capsicum 2
Mozzarella cheese 2 cup
Feel free to add whatever other toppings you like
Pepperoni, mushrooms, sausages. Olives..etc .
