8 md Green onions; chop
15 oz Black beans; rinse; drain
1/3 c Cheddar; shred
1/2 c Bisquick reduced fat or;
-original baking mix 1/2 cup Milk
1/2 cup Thick-and-chunky salsa
2 Eggs
Thick-and-chunky salsa Heat oven to 400~. Grease glass pie plate, 9x1-1/4". Layer corn, onions and beans in pie plate; stir gently. Sprinkle with cheese. Stir baking mix, milk, 1/2 c salsa and the eggs with fork until blended. Pour into pie plate. Bake 35-40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. DILEMMA PIE
Preheat oven to 350 to 425.
We were going to bake some rolls that needed 425 so that's what we used (also the meal was ready five minutes faster).
2 small chicken breasts cut into 1 inch cubes (about 2 cups chicken)
6 whole eggs
2 cups soft cheese
– use sour cream, cottage cheese, or Ricotta as is done in the video.
1 teaspoon salt – less if it is a salty cheese
4 Tablespoons fresh herbs, diced. I used garlic chives and oregano in the video
- or use 2 Tablespoons dried herbs, crumbled into the mixture
1 cup shredded cheese to top
oil or cooking spray
Great way to use foraged greens such as mustard greens, cheeseweed, peppergrass (covered in a recent YouTube video on this channel.)
Step 1. Place the soft cheese in the mixing bowl
Step 2. Add the eggs and blend
Step 3. Add the herbs, salt, and chicken.
Step 4. Add optional extras.
Step 5. Pour into greased cooking dish. We used a 10 inch cast iron skillet.
Step 6. Top with grated cheese.
You can optionally use the Farmer's Cheese we have in an upcoming post and YouTube video.
Step 7. Bake, uncovered, for 20 minutes in 425F oven. 25 minutes at 350F
Cheeseburger Pie
1 pound cooked, crumbled ground beef
1 tsp minced garlic
1 Tbsp minced onion
Salt & pepper to taste
1/2 cup Bisquick
1 cup milk
2 eggs
1-1/2 cups shredded cheese
Preheat oven t 400 and spray or grease a pie dish or an 8x8 square pan. Cook ground beef, onion, garlic& salt & pepper, until ground beef is done. Place ground beef into the pan. Mix together Bisquick, eggs & milk and pour over ground beef. Top with shredded cheese. Bake at 400 forb25-30 minutes. Allow it to cool for 5-10 minutes before serving.
STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top
