Impossible Lasagna Pie
Spray/grease dish (8x8 pan works well) spread 1/2 cup cottage cheese to bottom of dish Next layer - 1 pound of cooked hamburger (season to taste) drain fat, let cool for a few mins and add 1/2 cup shredded mozzarella cheese, 1/2 tsp salt, 1/2 tsp oregano and 1 small can tomato paste. Mix well and spread over cottage cheese layer. In a small bowl mix 1/2 cup **biscuit mix, 2 eggs and 1 cup milk. Pour on top of meat layer. Bake at 400 for 30-35 mins or until knife inserted in center comes out clean. Sprinkle with 1/2 cup mozzarella cheese and bake until melted.
**make your own biscuit mix (store in cool area or in fridge) 3 cups flour - I use all purpose 1 and 1/2 Tablespoon baking powder 1/2 Tablespoon salt 1/2 cup shortening (I use Crisco)
Mix with pastry cutter or fork until blended. Store in airtight container in cool area or refrigerate . Use within 1 month.

Today I present my Lasagna Pie. Forms of this recipe have been around for a while and some go by the title “impossible lasagna pie” and most also use Bisquick mix as a base. Frankly, the ones I’ve come across, don’t seem very flavorful. I hope to change that up with my low carb version. #papag #lasagnapie #lasagna

9.5-inch Pie Dish
Ingredients: 1/2 lb. ground beef 1/2 lb. Italian sausage 3 stalks green onion, chopped 2 cloves garlic, minced 1/2 cup whole milk ricotta 1/2 cup grated parmesan cheese Tomato Sauce (see below) 8oz. shredded mozzarella cheese, divided 2/3 cup heavy cream 1/3 cup water 2/3 cup Carbquick 2 eggs, lightly beaten Dried parsley as a garnish (optional)
Tomato Sauce: 15oz can crushed tomatoes 1 1/2 tsp Italian seasoning 1 tsp salt 3/4 tsp black pepper 1/2 tsp onion powder 1 tsp garlic powder 1 tsp dried oregano 1 tsp dried basil
Makes 8 servings
Per Serving: 384 calories / 30.7g fat / 5.07g net carbs / 21.77g protein
Directions: 1. Preheat oven to 400°F. 2. Mix the tomato sauce ingredients together in a bowl. 3. Add beef and sausage to a skillet on medium high heat and cook until the beef is halfway done. Add green onion and garlic and cook until beef is fully cooked. Drain and add the tomato sauce. Cook an additional minute or two. Remove from heat and set aside. 4. Using a separate bowl, with an electric mixer or whisk, blend cream, water, eggs, carbquick. 5. Lightly oil 9.5 or 10-inch pie dish. 6. Mix ricotta and parmesan cheese together and line the bottom of the dish. 7. Place meat mixture over ricotta and parmesan cheese. 8. Add 4oz. of mozzarella over the meat mixture. 9. Gently pour the batter into the pan. 10. Add remaining mozzarella over batter. 11. Bake for 30 minutes or until top is browned. 12. Remove and let stand 5 minutes before serving.
