Quinoa Breakfast Cereal

Quinoa is a tiny grain with big nutrition. What to eat for breakfast... one of the most frequently asked questions I encounter from clients. Well, my favorite breakfast is a bowl of warm cooked quinoa with apples (or bananas), raisins and nuts. And it only takes about 15 minutes to prepare! Quinoa is an ancient grain full of easily digestible protein, gluten-free, and low on the glycemic index.
Always start by soaking your quinoa for at least 30 minutes to neutralize the phytic acid that naturally occurs in most grains. If you want to speed up your morning routine, just put your quinoa in the pan of water the night before, but be sure to rinse it in the morning! I like to use the Tru Roots brand of quinoa because they have already soaked and sprouted the quinoa (the sprouting adds to the nutritional value!)
Quinoa porridge recipe | Oatmeal alternative that is better than oatmeal
Quinoa porridge is a very easy recipe to make at home and I like it better than oatmeal for many reasons, including the fact that quinoa is much easier to digest, it has a much better nutritional profile than oats, it tastes better, it is more filling and substantial than oats and it makes a great staple in a gluten free diet.
This recipe requires just a few ingredients and can be stored in the fridge for days. I make it with full fat coconut milk and it makes it rich, creamy and delicious but you can use any milk of your choice. I omit sweetener because there are enough carbs already in the quinoa, but I like to experiment with different toppings like cacao, cinnamon, seeds, nuts, coconut flakes, berries, etc.
Where I live I can't easily get certified organic oats, and oats are a heavily pesticide sprayed crop, while organic quinoa is abundant, cheap and grows locally, so that's another reason why I prefer it.
I love the taste of oatmeal but I don' find it very filling or substantial unlike quinoa, plus there is the fact that eating too much porridge can result in a breakout of acne for me while that never happens with quinoa. I always make sure to soak it overnight to optimise nutrient absorption and deactivate enzyme inhibitors and phytic acid in the quinoa.

Hot Breakfast Cereal Using Quinoa
Serves 2
½ c. quinoa, rinsed well
¾ c. good apple juice
¾ c. water
dash of salt
2 handfuls of dried fruit, chopped
cinnamon
vanilla extract
Optional spices: clove, nutmeg, cardamom, star anise
For serving: milk of your choice, yogurt, fresh fruit, chopped nuts, maple syrup, honey
Directions:
Boil water, apple juice and clove (if using). Once liquid is at a boil, add a dash of salt. Remove clove and stir in quinoa and dried fruit. Cover, and cook until done, approximately 20 minutes. Add cinnamon and vanilla extract, combine well. Serve with desired toppings. Enjoy!
