How To make Hoosier Chili
2 lbs. extra-lean ground beef
2 cups chopped onion
3/4 cup chopped celery
1/2 cup chopped green bell pepper
3 cloves garlic-minced
1 tsp. salt
1/4 tsp. black pepper
1 Tbsp. brown sugar
3 Tbsp. chili powder (or to taste)
2 16-oz. cans stewed tomatoes
1 46-oz. can tomato or V8 juice
1 can beef broth
1/2 cup uncooked elbow macaroni
1 15-oz. can kidney beans, rinsed and drained
In a large Dutch oven or soup kettle, brown beef until no longer pink. Add onions, celery, peppers, and garlic. Continue cooking until vegetables are tender. Add all remaining ingredients except macaroni and beans. Bring to a boil. Reduce heat, cover, and simmer for 1 1/2 hours, adding macaroni for last half hour of cooking time. Stir in beans and heat through. (makes about 4 1/2 quarts)

How To Make Three Pepper, Steak Fire Chili in a Slow Cooker
Today, we used Corey's ol pal Reid's chili recipe as a basis, before throwing the Number Six With Cheese spin on it. We added three different types of spicy peppers and bacon.
Recipe's ingredient list:
4 pounds steak (round or sirloin)
1 kielbasa
olive oil
1 large white onion, chopped
2 bell pepper, chopped
1 - 10-oz. can chicken broth
1 - 10 oz. beef broth
2 - 6 oz. tomato paste
1 - Tomato Sauce can
3-5 cloves garlic, finely chopped
Ancho chili powder
Chipotle chili powder (or any other combo of chili powders)
ground cumin
habanero powder
cayenne pepper
salt
El Yucateco Hot Sauce (XXXL)
2 teaspoon ground oregano
4 oz semi-sweet chocolate
2-3 tablespoons ketchup
Continually taste and tweak until you get the right taste after adding ketchup. A good rule of thumb is to keep some things equal with one another. For instance, always add equal parts of any chili powder combo you use, but always use a smaller amount of cumin.
Cube the steak and kielbasa into equal sized pieces for regularity. The ketchup is for when you get the right taste, but with a distinct aftertaste caused by the chocolate/chili combo. A little ketchup tangs it up and evens everything up.
Minced garlic pre-packaged is the way to go for this recipe, instead of trying to get the garlic cloves finely chopped and cooked to the perfect taste. We chopped our own, but it's ANNOYING.
Optional:
1 can kidney beans, rinsed and drained
1 can red beans, rinsed and drained
1 can pinto beans, rinsed and drained
Cut meat into 1/4 to 1/2 cubes. Cook each pound of meat separately this way: In large cooking pot, heat 1 teaspoon cooking oil, stir in 1 pound cubed meat, then sprinkle with 1/4 teaspoon seasoned salt and other spices. When meat is lightly browned, drain off all fat. Sautee kielbasa until browning, then add onion and bell pepper.
Return the steak to the pot and add all of the remaining ingredients, as well as the beans if you’re into that. Stir well to combine. Simmer uncovered over low heat for 3 hours, adding an additional 1 can chicken broth if necessary. DO NOT EVER ALLOW CHILI TO BOIL. Store in refrigerator overnight and eat (chili is always better after it sits overnight in the refrigerator). I like to garnish the top with shredded chedder cheese and a dob of sour cream or Cheez-Its.
This recipe makes 4 quarts (approx. 6 pounds).

Meals in a Jar - Best Chili Mac Recipe from Dried Ingredients
In this video I do a complete walk-through of preparing and cooking a really delicious chili mac recipe that is made with 100% dry and shelf-stable ingredients.
Meal in a jar recipes are great because you can prepare some really tasty stuff in advance, seal it in a jar, and the only ingredient you need to add is water. These jar meals will last a long time in the pantry, and provide a lot of convenience and variety to your long-term food plan.
Here is the full recipe:
Ingredients:
1 ordinary box of Mac 'n Cheese
1 packet chili seasoning (such as McCormick's)
1/2 lb equivalent freeze-dried beef
1/4 cup small kidney beans (optional)
1 poblano pepper, minced and dehydrated
1/2 cup dehydrated onion
1/4 cup dehydrated corn
1.5 tablespoons powdered milk
1.5 tablespoon powdered butter
2 tablespoons tomato powder
Preparing Meal in a Jar:
-Put beans and vegetables into quart mason jar.
-Put pasta and beef into a small, sealable bag like a zip-lock. Squeeze the air out of it, and tuck the bag into the jar.
-Put the powdered ingredients into another small baggy that can be sealed, and tuck that into the jar.
-Close the jar and seal it with vacuum-sealer (if you have one).
Cooking:
-Simmer beans and dried vegetables until soft.
-Add macaroni noodles and freeze-dried beef and simmer for 10 more minutes. Add some more water if needed.
-When pasta and beef are soft, strain most of the water out of the pan.
-Add powdered ingredient mix and stir thoroughly.
-Enjoy!
