How To make Holiday Pumpkin Muffins
2 c All-purpose flour
1/2 c Firmly backed lt-brown sugar
1/4 c Granulated sugar
2 ts Backing soda
1 t Pumpkin pie spice
1 Egg
3/4 c Canned solid-pack pumpkin
1/2 c 75% vegetable oil spread,
Melted 1/2 c Buttermilk
Confectioners' sugar glaze 1 c Confectioner's sugar
1 1/2 tb To 2 T milk
Preheat oven to 400 degrees. Grease 12 2 1/2-inch muffin pan cups. In large bowl, combine dry ingredients. In medium sized bowl, blend remainder of muffin ingredients until well mixed; stir into dry ingredients just until well blended. Fill prepared muffin pan cups with batter. Bake muffins 15 to 18 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan on wire rack. Serve warm or cool completely and drizzle with glaze. Store in tightly covered container at room temperature up to 3 days or in freezer in container up to 2 weeks. Confectioners' Sugar Glaze. Mix sugar and milk until blended. Easy Pumpkin Spice Muffins
1 (15 ounce) can pumpkin puree (just plain pumpkin -- NOT the canned pumpkin pie filling)
1 box spice cake
Follow directions on back of cake mix. Mix well. Add pumpkin purée. Not pumpkin pie filling.
Optional. Add chopped pecans on top before baking.
I did muffins but you can do a loaf pan or whatever you prefer.
Bake 350 20-25 minutes.
Cool.
Add icing of your choice. I made an icing using confectionery sugar, milk and vanilla extract. On another pan I dusted with powdered sugar.

Our vegan pumpkin muffins are made with simple pantry staples, and you can make them in 30 minutes.
They have all the pumpkin flavor, moisture, tender texture, and spiced deliciousness of regular pumpkin muffins.
⭐️ INGREDIENTS
Wet Ingredients
1 can (15 ounces) 100% pure pumpkin puree
1 cup sugar. You can go as low as ½ cup
⅓ cup almond milk or another plant milk
¼ cup olive oil sub another neutral oil or apple sauce
Spices
2 teaspoons cinnamon. You can sub all the spices with 2 teaspoons of pumpkin spice mix
½ teaspoon cloves ground
¼ teaspoon nutmeg
¼ teaspoon allspice
1 teaspoon ginger powder or fresh grated
Dry Ingredients
2 cups all-purpose flour or half all-purpose and half whole-wheat
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
⭐️ Bake at 350°F or 180°C for 23 minutes, or until a toothpick inserted in the center comes out dry.

2 cups flour (the original recipe says you can use spelt flour, whole wheat or even GF flour!)
2/3 cup sugar (swap for coconut sugar or date sugar to make them a bit healthier!)
