Mozzarella Chicken
Servings - 2 - 3
INGREDIENTS
Boneless chicken - 450 grams
Italian seasoning - 1 teaspoon
Paprika - 1 teaspoon
Onion powder - 1/2 teaspoon
Salt - 1 teaspoon
Black pepper - 1/2 teaspoon
Olive oil - 50 milliliters
Oil - 1 tablespoon
Onions - 70 grams
Garlic - 1 teaspoon
Bell pepper - 210 grams
Tomato puree - 410 grams
Garlic and herb tomato sauce - 2 tablespoons
Chilli flakes - 1/4 teaspoon
Italian seasoning - 1 teaspoon
Salt - 1/2 teaspoon
Mozzarella cheese - 80 grams
Coriander - for garnishing
PREPARATION
1. In a mixing bowl, add 450 grams boneless chicken, 1 teaspoon Italian seasoning, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1 teaspoon salt, 1/2 teaspoon black pepper and mix it well.
2. Marinate the chicken for 30 minutes.
3. Heat 50 milliliters olive oil in a heavy pot, place the marinated chicken on it. Cook for 7 - 10 minutes and then flip it. Cook for 7 - 10 minutes again. Keep aside.
4. Heat 1 tablespoon oil in a another heavy pot, add 70 grams onions and fry till translucent.
5. Add 1 teaspoon garlic and saute for 1 - 2 minutes.
6. Then, add 210 grams bell pepper, 410 grams tomato puree, 2 tablespoons garlic and herb tomato sauce, 1/4 teaspoon chilli flakes, 1 teaspoon Italian seasoning, 1/2 teaspoon salt and mix it well. Cook for 5 - 7 minutes.
7. Then place the cooked chicken on top of it and mix it well.
8. Add 80 grams mozzarella cheese on top of it.
9. Preheat the oven to 350°F/180 °C. Bake for 10 minutes or till the cheese is melted.
10. Remove it from oven and garnish with coriander.
11. Serve hot.

Mozzarella chicken is easy to make one-pan low-carb dinner recipe that is ready in less than 30 minutes. Pan seared chicken smothered in rich homemade tomato based sauce and molten melted mozzarella cheese. A meal that entire family would love!
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4 servings
Ingredients
4 boneless chicken breasts
1 tablespoon Italian seasoning
1 ½ teaspoon smoked paprika
1 teaspoon onion powder
Salt & pepper to taste
2 tablespoon olive oil
1 yellow onion, chopped
2 cloves garlic, minced
1 15 oz can crushed tomatoes
1 tablespoon tomato paste
1/2 teaspoon red chili flakes
¾ cup mozzarella cheese
Fresh parsley for garnish
Instructions
Season chicken breast with salt and pepper, Italian seasoning, onion powder, smoked paprika. Rub the spices to spread evenly. Season on both sides.
Heat olive oil in a skillet. Cook chicken breasts on medium heat until browned and cooked through on both sides (about 3-5 minutes each side). Transfer seared chicken to a plate, set aside.
To the same skillet add about 2 teaspoon more olive oil if it’s too dry. Cook diced onion in the same pan until translucent scrapping the brown bits from the bottom of the pan while cooking.
Add minced garlic and cook till garlic is fragrant. Pour the juices oozed by browned chicken in the plate.
Add crushed tomatoes, tomato paste and red chilies flakes, stir to combine. Simmer and cook until tomato sauce is thickened (about 5 minutes).
Season sauce with salt and pepper to taste.
Nestle seared chicken breast into the thickened tomato sauce.
You can cover chicken breasts with a spoonful of tomato sauce.
Top each chicken breast with 2 to 3 tablespoon of mozzarella cheese (you can use mozzarella cheese slices instead of grated cheese).
Transfer skillet to pre heat oven set to broiler settings. Broil for 2-3 minutes until cheese is molten, browned, hot and bubbly.
Garnish with fresh parsley.
Serve immediately with spaghetti or with crusty bread and a salad.
