How To make Grilled Loin Of Pork with Tart Cherry Sauce
4 lb Boneless pork loin roast,
-fat trimmed Salt Pepper 1 c Dry red wine
1/2 c Orange juice
3 tb Chopped shallots or onions
1 Clove garlic, minced
1/4 ts Minced ginger root
1/8 ts Ground allspice
1/8 ts Pepper
3 tb Cornstarch
1/3 c Cold water
1 lb Fresh or frozen cherries
1/4 To 1/3 cup NutraSweet
-Spoonful Dunno how you feel about NutriSweet and such ilk, but I'm posting a bunch of stuff from NutriSweets cookbook. Some of it looks right good. Tart cherries in a red wine sauce are the perfect complement to roast pork, while they give a dinnertime favorite new taste appeal. Lightly sprinkle the roast with salt and pepper; place on rack in roasting pan. Insert meat thermometer so tip is in center of meat. Roast at 325F until thermometer registers 170F, about 2 hours. Heat the wine, orange juice, shallots, garlic, ginger root, allspice and 1/8 teaspoon pepper to boiling in medium saucepan; reduce heat to low and simmer, covered, for 10 minutes. Heat to boiling once more. Mix cornstarch and cold water; stir into boiling mixture. Boil, stirring constantly, until thickened. Stir in cherries; cook over low heat for 2 to 3 minutes. Remove from heat; cool for 2 to 3 minutes. Stir in NutraSweet Spoonful. Slice pork and arrange on platter; serve with Cherry Sauce. NOTE: Tart Cherry Sauce is also excellent served with venison or other game. Makes 12 servings. INGREDIENTS:
-cherry glaze
●1 (12 ounce) jar cherry preserves
●2 tablespoons cajun seasoning, Butt Kickin' Blacken, Original Recipe
●1/4 cup red wine vinegar
●1/4 cup ruby port, as needed
●pork
●1 pork tenderloin, about 35 pounds
●6 slices bacon , Thick-sliced
●1 tablespoon cajun seasoning, Butt Kickin' Blacken, Original Recipe
●toothpick
●vegetable oil
Pork Tenderloin with Red Wine Cherry Sauce
Those cherries in the store are just too tempting! Why not use them beyond dessert? This pork tenderloin recipe makes the most of sweet cherries and red wine!
A quick note on salt. The version I made was a lot lighter on the salt, especially with the brine. You may prefer a saltier brine. 2 tablespoons of salt will get you a medium level of saltiness, and 3 tablespoons will have a more pronounced salt level. As always, salt to taste and to suit your dietary needs.
For this recipe, you will need:
1 pork tenderloin
Brine:
2 cups of water
3 tablespoons light brown sugar
¼ teaspoon to 3 tablespoons kosher salt (see note above)
1 ½ tablespoons olive oil (for searing meat)
Red Wine Cherry Sauce:
8 ounces of fresh cherries, pitted and quartered (about 2 cups)
2 tablespoons unsalted butter
2 tablespoons chopped shallots
¼ cup dry red wine (I used Cabernet Sauvignon)
¼ teaspoon kosher salt (or to taste)
¼ teaspoon dried thyme or 2 sprigs of fresh thyme
¼ teaspoon black pepper (or to taste)
Sear the pork in a medium heat on all sides, then roast 10-15 minutes in a 450 degree oven until the internal temperature is 140 degrees. Let rest for 5 minutes before slicing and serving with the cherry sauce.

Removing the cherry seed without cutting it, push with a hard straw or skewer to the side of the tail and the seed will come out easily.
